After a festive feast, you always want a fresh and light soup, but you don't want to cook for a long time. In such a case, I recommend that you always have a vegetable mixture and any minced meat in the freezer. You can make a simple and easy soup with these ingredients in just 15 minutes. It is tasty, aromatic and low in calories.
Optionally, you can add potatoes and rice to this soup - you get a more satisfying option.

Also, such a simple soup can be prepared for every day. It is also perfect for you if you stick to the right diet.

Ingredients:

  • water - 2 l
  • frozen vegetable mixture - 400 g
  • minced meat - 350 g
  • tomato paste - 1 tsp l.
  • salt to taste
  • ground black pepper - to taste

Step by step recipe

1. Pour 2 liters of water into a 4 liter saucepan. We put on fire.
While the water is boiling, prepare the meatballs.

2. We take 350 g of minced meat, salt it and pepper with ground black pepper.
We mix everything. I use minced veal, but any other is also fine, such as pork or chicken.
Roll up small meatballs from the prepared minced meat.

3. The water has boiled and put the prepared meatballs in it.
When the water with the meatballs boils, remove the resulting foam.
Cook the meatballs for about 3 minutes.

4. Put 400 g of frozen vegetable mixture here in the pan.
I use Spring Veggie Blend, but you can use whatever you like.
When everything boils, salt the soup with about half a tablespoon of salt and pepper with black ground pepper.

5. We also add 1 tsp here. l. tomato paste.
Cook the soup for about 5 minutes and remove from heat. The soup is ready to serve.

The soup with vegetables turned out to be very aromatic, light and tasty. It is easy and quick to prepare.
Optionally, you can add potatoes or rice to this soup.
