Literally this morning I was preparing these pancakes and decided to take a photo right away to share the recipe. There is nothing special about it, except that only 2 tablespoons of flour are added to the dough. So it is suitable for those who monitor the amount of flour in their diet. Well, if you also use flour with a low glycemic index, for example oatmeal or flaxseed, then in general you get a completely dietary option.
So, the basis of pancakes is a banana, you need to mash it with a fork into a homogeneous puree. Add one egg and 2 tablespoons of milk to it.
Mix everything and do not forget to add a little salt. Now is the time to add flour, I used corn flour today, 2 rounded tablespoons. In fact, the amount of flour can vary depending on the size of the banana and egg. But usually 2 heaped tablespoons are enough. You can add a little sugar, but I do not add, the sweetness of a banana is enough for me.
Last but not least, I add some baking soda, slaked vinegar or lemon juice. I stir and now you can fry.
I grease the pan with vegetable oil using a brush and put one tablespoon of dough
Fry for 3-4 minutes on each side over medium heat. The pancakes turn out a little darkish due to the presence of banana in the dough, which is known to "like" to darken in the air. But this does not affect the taste at all.
