Step by step recipe on how to make waffle crumbs at home
Beat butter with powdered sugar until creamy. Add the protein and beat until smooth. Then sift the flour and stir with a spatula until combined.

Divide the mass into 4 parts and distribute each in a thin layer over a sheet of parchment the size of a baking sheet.
I bake at 160 ° C with convection on. I check the readiness by the ruddy color of the workpiece.
It took me about 7 minutes to bake, but due to the difference in ovens, your time may decrease or increase.
After baking, let it cool and break the dough into crumbs. I like small pieces.
I put the crumb for storage in an airtight container without air access. If the crumb has gained moisture during storage, it can be dried in the oven at 130 ° C.
