Today I want to offer you a recipe for making very tasty pies that can be prepared with any filling. These pies are very popular in my family, children simply adore them. ๐Ÿฅฐ

๐Ÿ“•For cooking you will need: ๐Ÿฒ

For dough:
Kefir (better to take fatty) - 400 ml
Sugar - 1 tsp l.
Wheat flour - 4 tbsp. l.
Dry yeast - 10 g
Soda is a small pinch.
For mainly kneading dough:
Chicken egg - 1 pc.
Sugar - 150 g
Butter - 50 g
Odorless vegetable oil - 50 g
Vanillin - on the tip of a knife
Wheat flour - 700 g
Salt - 1 tsp l.
For filling:
Boiled condensed milk (you can take any jam) - 250 g
Semolina - 7 g (if necessary - if the filling is too liquid)
And, to make the pies more rosy and beautiful:
Chicken egg - 1 pc.
Sesame or sugar for sprinkling.

First of all, we will make a dough, take a small bowl, pour warm kefir into it. Add yeast, sugar, flour (literally 2-3 tablespoons of the total). We mix everything well, achieving a homogeneous mass. We also put a pinch of soda - I always put it in yeast dough (if the dough is on kefir) to extinguish the excess acid of kefir. Leave at room temperature for 15 minutes so that the yeast begins to ferment.

When the dough becomes foamy and slightly increases in volume, we continue to knead the dough. Sift flour into a large deep container, add sugar, eggs, melted and cooled butter, vegetable oil, vanillin and salt. Pour the dough on top. We knead the dough by hand or using a kneader. It is better not to mix all the flour right away with the rest of the ingredients, because you may need it a little less than I do. It depends on the quality of the flour.

Knead the smooth, buttery dough, round it and place it in a bowl. We tighten the bowl with cling film (or cover with a lid) and leave in a warm place to rise for 1.5-2 hours.

This is how the dough rose - it became very fluffy and soft.

Gently put the dough out of the bowl on the table (DO NOT crunch!). At the same time, you do not need to sprinkle the table with flour - the dough does not stick, because there is a lot of fat in it. Divide the dough into pieces of about 90-95 g each, form balls from them.

Roll each ball into an oblong cake.

In the middle, carefully put the filling - as I said, it can be any, condensed milk, jam, stewed apples. This time I have boiled condensed milk, and if you use jam and even more liquid, it is better to mix it with semolina so that the filling does not leak out during baking.

We cover one edge of the workpiece with the other and press the dough with our fingers along the contour of the filling, as if forming a pocket in which the condensed milk will be located.

We make neat cuts along the edge, preferably not reaching the filling. Otherwise, it will immediately begin to flow.

We transfer all prepared pies to a baking sheet covered with a silicone mat or baking parchment (parchment paper). Grease the top with a beaten egg and sprinkle with sugar or sesame seeds. And we send to bake in the oven ...
