A very tender, soft, melting in your mouth cottage cheese pie is a real find for those who do not like to fiddle with yeast dough. I have been preparing it for a long time and I want to say that it never gets boring - it has been tested on the personal experience of my family.🥰

✨ The dough is very convenient to work with, it kneads very quickly and does not require ripening. I highly recommend trying it to everyone, even those who do not like pure cottage cheese.

📕Ingredients for making the cake: 🍲

High fat cottage cheese (from 9%, if possible, buy homemade) - 0.5 kg
Butter (82.5%) - 100 g
Chicken egg (large) - 1 pc.
Granulated sugar - 100 g (to taste)
Vanillin - on the tip of a knife or 1 tsp. l. vanilla sugar
Wheat flour - 350 g
Egg yolk - 1 pc. (to grease the top of the cake before baking).

Put the cottage cheese in a deep bowl, add sugar, vanillin, butter cut into pieces (and it must be soft), drive in an egg.

We punch everything with an immersion blender until the consistency of a smooth, homogeneous cream.

If there is no blender, first rub the cottage cheese separately through a metal sieve to make it as homogeneous as possible, then add softened butter, sugar, egg, vanillin. We grind everything until smooth.

Separately sift the flour and mix it with baking powder. In small portions, add dry ingredients to the curd mass.

Gradually knead a soft, smooth, slightly sticky dough. It is important not to clog it with flour, therefore, as soon as it starts to move well from the hands and walls of the dishes, we stop.

We cut off about 1/3 of the finished dough and roll it into a layer 5-6 mm thick on a table sprinkled with flour. Using a round cookie cutter or a regular glass, cut out the circles.

Add the trimmings to the rest of the dough, and form "roses" from the circles. This is done as follows: lay 4-5 round blanks in a row, slightly overlap.

And then we turn it into a roll and cut it in half - we get 2 blanks.

Put the resulting "roses" tightly in a baking dish covered with baking parchment. I used to bake the cake on a silicone mat, in a culinary ring with an adjustable diameter, but any shape will work, even one-piece.

Lubricate the top of the pie with yolk mixed with 0.5 tsp. l. water or milk and send to bake in the oven ...

And it is baked in the oven for about 30-40 minutes, at a temperature of 180 degrees. Here is such a ruddy cake !!!
