The basis of the salad is broccoli. We will not use boiled broccoli in the salad, but fresh. But first we'll marinate it. Due to the marinade, broccoli turns out to be tasty and unusual.

This salad is very easy to prepare. By the way, instead of pine nuts, you can use sesame seeds, and feta cheese can be easily replaced with feta cheese or mozzarella.

Ingredients:

  • broccoli cabbage - 500 g
  • cherry tomatoes - 250 g
  • feta cheese (feta cheese, mozzarella) - 200 g
  • pine nuts (or sesame seeds) - 20 g

Refueling

  • olive oil - 7 tbsp. l.
  • apple cider vinegar (wine) - 4 tbsp. l.
  • garlic - 2-3 cloves
  • mustard - 1 tsp l.
  • sugar - 1/2 tsp l.
  • salt - 1/2 tsp l.

Step by step recipe

1. 0.5 kg of broccoli wash and cut into small inflorescences. Cut the inflorescences into the smallest pieces so that the cabbage is better marinated. Transfer the prepared broccoli to a small saucepan or bowl with a lid.

2. Preparing the dressing.
Pour 7 tbsp into a separate bowl. l. I took olive oil, but you can also take unrefined sunflower oil. Add 4 tbsp to the butter. l. apple cider vinegar or wine vinegar, or lemon juice.
Pour 0.5 tsp into the dressing. l. sugar, 0.5 tsp. salt and 1 tsp. mustard. Mix everything before combining the ingredients.

3. Here we squeeze 2-3 cloves of garlic through a press and mix again.

4. Pour the prepared dressing evenly over the broccoli using a spoon. Mix everything well.
Cover the saucepan with a lid and put in the refrigerator to marinate for 7-8 hours. I set to marinate overnight.

5. The cabbage is pickled, we are preparing the rest of the ingredients.
Cut 250 cherry tomatoes into halves. You can also use large tomatoes by cutting them into wedges.

Cut 200 g of feta cheese into cubes about 1.5 cm in size. Instead of feta cheese, you can use Adyghe cheese or mozzarella.

6. Add chopped tomatoes to the pickled broccoli and mix a little.

7. Add cheese cubes to this and mix everything carefully so as not to crush the cheese cubes.

8. We transfer the salad to a bowl in which we will serve it on the table. Sprinkle the salad with pine nuts. They can be replaced with sesame seeds or any other nuts.
The salad is ready, you can serve it.

Milena salad with broccoli turned out to be very tasty and fresh due to broccoli cabbage. After pickling, the cabbage turns out not raw, but just al dente.
The salad is very simple to prepare and looks bright and beautiful.
