Ingredients (for 21 cm mold):
Coffee layer
- water - 300 ml
- sugar - 25 g
- gelatin - 12 g
- instant coffee - 3 g
Milk-coffee layer
- milk - 150 ml
- water - 150 ml
- sugar - 25 g
- gelatin - 12 g
- instant coffee - 3 g
Sour cream layer
- sour cream - 1.2 l
- sugar - 250 g
- water - 150 ml
- gelatin - 40 g
- vanilla sugar - 10 g
Step by step recipe
1. PREPARING COFFEE LAYER
Pour 12 g of gelatin into a bowl and pour 50 ml of cold water. Mix everything and leave the gelatin to swell for 10-15 minutes.
2. Pour 25 g of sugar and 3 g of instant coffee into a separate bowl. Pour 250 ml of boiling water here. Mix everything until coffee and sugar dissolve
3. Add already swollen gelatin to this coffee. Stir until the gelatin is completely dissolved.
4. Pour this mixture into a small flat container. I have a form measuring 24 x 10 cm.
Leave it to cool to room temperature, and then put it in the refrigerator to completely freeze the coffee layer.
5. PREPARING MILK COFFEE LAYER
Pour 12 g of gelatin into a bowl and pour 50 ml of cold water. Mix everything and leave the gelatin to swell for 10-15 minutes.
6. Pour 25 g of sugar, 3 g of instant coffee into a separate bowl and pour 100 ml of boiling water. We mix everything.
7. While the coffee drink is hot, add the swollen gelatin and mix everything well.
8. Pour 150 ml of milk into the same mixture. We mix everything.
9. Pour into a small container to solidify. I pour it into a 16.5 cm mold.
Put it in the refrigerator to freeze.
10. 2 hours passed. The coffee and milk-coffee jelly is already frozen. We cut it into small cubes and take it out of the molds.
11. We take a cake mold, in my case it is detachable and wrap it on top with cling film so that the jelly does not leak out. You can also use a bowl, baking dish, or saucepan. The diameter of my mold is 21 cm.
12. Put pieces of jelly in the prepared form. We try to lay out in a shuffle. We leave some of the jelly cubes to decorate the cake on top.
13. PREPARING CREAMED JELLY LAYER
Pour 40 g of gelatin into a bowl and pour 150 ml of cold water. Mix everything and leave the gelatin to swell. It is advisable to prepare the gelatin while the coffee and milk-coffee jelly is solidifying.
14. Pour 1200 ml of sour cream into a separate bowl, add 250 g of sugar and 10 g of vanilla sugar. We mix everything.
15. The gelatin is already swollen. Heat it up in the microwave for 10-15 seconds and stir. Then put it in the microwave again for 10-15 seconds and stir again. So we repeat 3-4 times. The gelatin should warm up to about 50 degrees. Also, gelatin can be heated over low heat, stirring constantly.
16. Pour 2 tbsp into the loose gelatin. l. prepared sour cream and mix well.
17. Pour this mixture gradually into sour cream and stir with a whisk until smooth. So that the sour cream does not immediately thicken, it must be removed from the refrigerator about 1 hour before cooking, so that it has time to warm up to room temperature.
18. Pour the prepared sour cream into a mold with jelly cubes. We carefully distribute the coffee cubes over the sour cream mass.
19. Decorate the top of the cake with the remaining jelly cubes.
Put the cake in the refrigerator to freeze for about 3-4 hours.
20. The cake is frozen. We remove the cling film.
In order for the cake to come out of the mold beautifully, the sides of the mold need to be warmed up with a hairdryer. If you are in a hurry, you can just walk from the side with a knife. If you are making a cake in a bowl or saucepan, then it should be dipped in hot water for a few seconds.
21. Carefully rearrange the cake on a dish and serve.
