Ingredients:
Biscuit
- eggs - 5 pcs.
- flour - 130 g (5 tbsp. l. with a large slide)
- sugar - 120 g (5 tbsp. l. with a large slide)
Cream
- boiled condensed milk - 180 g
- butter - 150 g
- canned cherries - 100 g
Impregnation syrup
- water - 1/3 tbsp.
- sugar - 1/3 tbsp.
Drawing mass
- flour - 40 g (1 tbsp. l. with a large slide)
- protein - 36 g (from 1 egg)
- butter - 30 g
- food coloring - RED, YELLOW, GREEN
Step by step recipe
Preparing the drawing mass
1. Beat the protein of one egg with a mixer, adding sugar a little. Beat until firm foam.
2. Add softened butter to the protein and beat a little again.
3. Then add flour here and beat again.
4. Divide the resulting dough into three unequal parts.

6. We transfer the colored mass to pastry bags.
7. For even application of the pattern on the biscuit roll, we need a stencil. I printed it out, but you can draw it by hand.
Place the stencil under the parchment paper. We take parchment paper to the size of the baking sheet.
Use good quality, siliconized parchment paper.

We transfer the drawing on the parchment onto a tray or board and put it in the freezer.
Cooking a biscuit
10. While the flowers are freezing, prepare a biscuit dough.
Divide 5 eggs into yolk and white.
11. We begin to beat the whites and add a pinch of salt to them so that they beat better. Little by little add sugar to the proteins and beat until dense, stable peaks. When turning the bowl, the whites should not run out.
12. Add the yolks to the whipped whites one at a time, without stopping whipping. Beat until smooth.
13. Add sifted flour to the beaten eggs in 2-3 approaches. Stir briefly at the lowest mixer speed or use a spatula. The dough should not settle.
14. Transfer the frozen flowers back to the baking sheet. Pour the just kneaded biscuit dough on top and distribute it evenly over the entire baking sheet.
15. We put the biscuit in preheated to 180 degrees. oven and bake for about 25 minutes.
16. While the biscuit is baking, prepare the syrup.
Mix 1/3 cup sugar and water and put on fire. After boiling, boil the syrup for 1-2 minutes and remove from heat. Let the syrup cool.
17. We immediately take the finished biscuit out of the oven and remove the parchment paper from it.
Put a pre-soaked and well-wrung towel on the table, and a biscuit on top of it.
Roll the sponge cake together with a towel. This should be done as quickly as possible, before the biscuit has cooled down and begins to break.
Leave the rolled biscuit to cool.
Cooking cream
18. Beat butter at room temperature until white. Add boiled condensed milk to the butter and beat everything again.

19. Expand the cooled biscuit and remove the towel.
Soak the biscuit well with the prepared syrup.
20. Apply the cream evenly on the soaked biscuit.
Spread the filling around the edge of the biscuit. I have this cherry.
21. Gently roll the biscuit into a roll.
22. We wrap the roll in plastic wrap and put it in the refrigerator for several hours.
23. A roll with such a cream reveals its taste best at room temperature. Therefore, remove it from the refrigerator before serving.
