Ingredients:

Biscuit

  • eggs - 5 pcs.
  • flour - 130 g
  • sugar - 120 g
  • vanilla sugar - 10 g
  • cocoa - 2-3 tsp; l.

Impregnation syrup

  • water - 1/2 tbsp.
  • sugar - 1/2 tbsp.

Cream

  • butter - 200 g
  • cottage cheese - 200 g
  • icing sugar - 80 g
  • sour cream - 1 tbsp. l.

Step by step recipe

1. Carefully divide 5 eggs into white and yolk. Pour the whites into a bowl, and the yolks into a clean and dry glass. The yolks must not get into the whites.

2. Begin to beat the whites at a low mixer speed. When the foam appears gradually, in small portions, pour 120 g of sugar, while not stopping whipping. We also add 10 g of vanilla sugar here. Beat everything until a dense thick foam that keeps its shape well, this is very important.

3. Add the yolks one at a time to the whipped whites and beat for about 2 minutes.

4. Add 130 g of flour sifted through a sieve to this mixture in three approaches. Mix everything carefully and briefly with a spatula until smooth, while the airiness of the dough should remain.

5. Transfer about 1/4 of the finished dough to a separate bowl. Pour 2-3 tsp to this part of the dough. l. cocoa powder. Gently mix everything until smooth.

6. Put the finished chocolate dough into a culinary bag.

7. Put the white dough on a baking sheet covered with parchment paper. We form a rectangle out of it. The size of my baking sheet at the bottom is 33 x 43 cm.

8. Draw spiral circles on white dough with chocolate dough. Distribute the remaining chocolate dough along the perimeter of the white dough.

9. With a toothpick, draw from the edges to the center along the drawn circles to make flowers. Each time we wipe the toothpick on a napkin so that the drawing is clear and does not smudge.

10. We put the prepared biscuit in the oven preheated to 180 degrees. We bake for about 15-18 minutes.

11. Take the baked biscuit out of the oven and immediately turn it over onto a spread sheet of parchment paper. Remove the paper on which the biscuit was baked. Roll the sponge cake together with the paper. So we leave it until it cools completely.

12. While the biscuit is cooling, prepare the syrup for impregnation.
Pour 0.5 cups of sugar into a saucepan and pour 0.5 cups of water. We put everything on fire. When the syrup boils, boil it for 1 minute and remove from heat.

13. Preparing the cream for the roll.
Pour 200 g of cold cottage cheese into the grinder and pour about half of the powdered sugar, in total it will need 80 g. If the cottage cheese is dry, then add 1 tbsp. l. sour cream.

14. Grind everything until smooth. You can also grind the curd with an immersion blender. You can also use curd cheese instead of cottage cheese.

15. Put 200 g of softened butter in a dry bowl and add the rest of the icing sugar. Beat butter with powder for about 2 minutes until white.

16. Add chopped cottage cheese to the whipped butter, it should be cold. Mix everything with a spatula or spoon. Do not mix with a mixer, as the cream may exfoliate.

17. The biscuit has already cooled down, unfold it on the board and remove the parchment paper.
Soak the sponge cake from the inside with sugar syrup.

18. Put the prepared cream on top of the biscuit over the entire surface in an even layer.
Gently not squeezing too much, so as not to squeeze out the filling, we twist the roll.

19. So that there is a more beautiful and clear picture, we remove the top crust of the roll with a knife, but this can be omitted.

20. Wrap the roll again in parchment paper and put it in the refrigerator to cool.
Cut the finished roll into portions and serve.
