- Pour gelatin with water and leave to swell.

- When the temperature of the syrup reaches 130 ° C, start beating one egg white with a pinch of salt until fluffy.
- When the syrup is ready, gently pour it into the whipped egg white.
- When all the syrup has been introduced, reduce the speed to medium and beat until the mass begins to wrap around the whisk.
- Melt the swollen gelatin until completely dissolved in the microwave or in a water bath.
- When the nougat has cooled to room temperature, add mascarpone in portions and mix at low speed.
- When the masses are connected, the revolutions can be increased (I introduced mascarpone in 5 receptions).
- Then add cold heavy cream, mix gently and whisk.
- And when the cream is ready to inject gelatin at the lowest speed.
- Put the cream in the refrigerator to stabilize.
- It can be put into a piping bag immediately.
NUT CARAMEL SNEAKERS
- Heat a thick-bottomed saucepan on the stove, and gently add sugar.
- When the main part of the sugar has melted, you can gently stir so that it does not burn.
- At the same time, bring heavy cream to a boil on the adjacent burner.
- When the sugar has acquired a rich caramel color, add cream in portions with continuous stirring.
Do this very carefully, the mixture will boil!
- You can add a pinch of salt, boil the caramel for one minute and turn off the heat.
- When the caramel has cooled to about 60 ° C, add nut butter to it.
Prepare a baking tray for the biscuit.
CHOCOLATE SPONGE FOR SNEAKERS CAKE
- Combine flour, cocoa powder and baking powder.
- This mixture will need to be sieved before adding to the dough.
- Beat eggs until fluffy and add sugar.
Preheat the oven to 190 ° C degrees.
- Add dry ingredients in 2-3 doses.
- Do not forget to lift the mass, cocoa always sinks to the bottom.
- Add a tablespoon of neutral vegetable oil last.
- Spread the dough evenly over the parchment.
