Pancakes with meat according to grandmother's recipe are easy and quick to prepare. Their peculiarity and the secret of juiciness is that the meat filling is put raw. But with further frying, the meat has time to cook completely. It is only important to put the filling on the pancake in a thin layer.

Ingredients:

Pancake dough

  • milk - 600 ml
  • eggs - 2 pcs.
  • flour - 270 g
  • sugar - 1/2 tsp l.
  • salt - 1/2 tsp l.
  • vegetable oil

Meat filling

  • pork (any other meat) - 300 g
  • onions - 2 pcs.
  • water - 50 ml
  • ground black pepper - to taste
  • salt to taste

Step by step recipe

1. First, let's prepare the pancakes. Break eggs into a bowl, add sugar and salt. Beat everything a little.

2. Add about 150 ml of milk to this and mix again.

3. Add flour to the mixture and mix until smooth.

4. Add the remaining milk to the resulting dough and mix completely. Be sure to let the dough brew for about 15 minutes.

5. Before frying the pancakes, add 2 tbsp to the dough. l. sunflower oil and mix well.

6. Fry the first pancake in a pan with a small amount of sunflower oil. Fry the rest of the pancakes in a dry frying pan over low heat.
Pour a ladle of dough into a preheated pan and distribute it by tilting the pan in different directions. As soon as the pancake is slightly fried on one side, turn it over to the other side. You do not need to fry pancakes too much.

7. Now let's prepare the meat filling. Twist the prepared meat and onions through a meat grinder.
Salt and pepper the meat filling and add 50 ml of water, so that the meat is juicy.
Mix everything well.

8. We start pancakes. We take one finished pancake and cut it in half.
Put about one tablespoon of minced meat on each of the halves and distribute it evenly over the pancake.

9. We fold the edges of each half of the pancake to the middle, and then fold it in half to form a triangle.

10. Pour some sunflower oil into a preheated pan and put a piece of butter for taste.
Put the prepared stuffed pancakes in the pan.

Fry pancakes with meat over low heat under the lid, about 2-3 minutes on each side.
I ended up with about 24 empanadas.

Serve ready-made pancakes warm.
