Shrovetide has begun. But what about Shrovetide without pancakes?

I took out my old notebook with recipes and decided to remember a long-forgotten recipe for kefir pancakes, which turn out to be delicate, in a hole.

📌 For making pancakes, I used:

  • kefir 2.5% - 500 ml,
  • 2 chicken eggs (60 g each),
  • 280 g of wheat flour (I used premium flour, but ardent fans of proper nutrition, they may well replace it with whole grain flour or durum wheat flour),
  • 250 g boiling water
  • 20 g olive oil
  • a pinch of salt, 2 sachets of sweetener (or 10 g of sugar) and 1/2 teaspoon of baking soda.

📌Cooking.

Beat kefir with eggs adding salt and sweetener to it. I used a blender, thanks to which not a single lump remained in the dough.

If you want sweeter pancakes, add more sahzam / sugar to taste.

Gradually add flour to the kefir and continue to beat.

Pour boiling water mixed with soda into a well-mixed dough and beat again.

Add oil at the very last moment and stir.

We bake pancakes in a well-heated frying pan! I baked in a non-stick frying pan - the first time it is better to grease the pan with a drop of oil.

The less dough you pour into the pan, the thinner the pancakes will be.

The main secret of pancakes in a hole:

  • boil with boiling water and bake in a very hot frying pan.
