It perfectly combines everything - thin tender pancakes, fragrant mushroom filling and cheese crust on top. Milk filling adds juiciness to the cake. And how beautiful he is!

Cooking this awesome mushroom pie will not be difficult for you, and your family will ask you to cook it more often. By the way, you can experiment with fillings to your liking. This recipe for a pancake pie is universal, there can be both a sweet filling and a meat one.

Ingredients:

Pancakes

  • milk - 750 ml
  • flour - 300 g
  • eggs - 2 pcs.
  • vegetable oil - 2 tbsp. l.
  • sugar - 1 tbsp. l.
  • salt - 1/2 tsp l.

Filling

  • champignons - 600 g
  • cream 10% - 200 ml
  • onion - 1 pc.
  • flour - 1 tbsp. l.
  • salt to taste
  • ground black pepper - to taste

Fill

  • eggs - 3 pcs.
  • milk - 150 ml
  • cheese - 50 g
  • salt to taste
  • ground black pepper - to taste

Step by step recipe

1. First, let's prepare the pancake dough.
Break 2 eggs into a bowl, add 1 tbsp. l. sugar and 0.5 tsp. l. salt. Beat everything with a mixer until light foam.

2. Take 750 ml of warm milk and pour about 300 ml into a bowl. Gently mix at low mixer speeds or with a whisk by hand so that the batter does not splatter.

3. Pour 300 g of flour here, first mix with the off mixer so that the flour does not gather dust, and then turn on and mix the dough at low speed until smooth.

4. Pour in the remaining 450 ml of warm milk. Mix again.

5. To prevent the pancakes from sticking to the pan, pour about 2 tablespoons. vegetable oil and mix. Leave the dough on the table to rest for 15 minutes.

6. While the dough is infused, prepare the mushroom filling for pancakes.
Cut 1 large onion into quarters.
Cut 600 g of champignons in half and cut into slices.

7. Put the prepared mushrooms in a hot pan. Fry over the highest heat until all the liquid has evaporated. When the liquid has evaporated, pour some vegetable oil into the pan.

8. Put the chopped onion here. Fry everything until the onions are ready. Salt the mushrooms to taste and pepper. We mix everything.

9. Pour 1 tbsp on the mushrooms. l. with a heap of flour and mix well. Pour 200 ml of cream with 10-15% fat here. Mix everything until the cream thickens.
The filling is ready, remove it from the heat and leave to cool.

10. The dough is infused, we fry the pancakes.
Before the first pancake, grease the pan with a little vegetable oil.
Take about half a ladle of dough and pour it into the pan, distributing it throughout the pan. Fry the pancakes over a slightly less than medium heat.

11. When the pancake is fried on one side, turn it over to the other side. So we fry all the pancakes. From this amount of dough, I got 25 pancakes in a frying pan with a diameter of 24 cm.

12. We start pancakes.
We put a pancake and spread on one side about 2 tbsp. l. mushroom filling. We turn the pancake into a tube. So we fill all the pancakes. I had enough filling for 8 pancakes.

13. Grease the baking dish with butter. Put stuffed pancakes in it in a circle. For a mold with a diameter of 22 cm, 8 stuffed pancakes were needed. If your shape is larger than mine, then the number of filled pancakes can be increased by putting a little less filling in them.

14. Preparing the sauce for the casserole.
Break 3 eggs into a bowl and pour 150 ml of milk. Salt everything to taste and pepper. Stir with a whisk until smooth, without beating.

15. 50 g of cheese three on a coarse grater.

16. Pour the prepared filling onto the pancakes in the form.
Sprinkle everything on top with grated cheese.

17. We put in an oven preheated to 180 degrees. We bake for about 35 minutes.

The pancake pie with mushrooms turned out to be very tasty and satisfying. It is prepared from the most affordable products and always turns out. If desired, the mushroom filling can be replaced with any other one according to your taste, for example, meat or cottage cheese.
