If you want to decorate Easter cakes in a bright and original way, then you need to take care of the decor in advance. I suggest preparing an Easter decor for meringue cakes. Such decoration stands out favorably against the background of purchased sprinkles and figurines. And this decor is completely edible, which cannot be said about the purchased one.
Preparing Easter decor from meringues is not difficult. You will need a mixer, piping bags, attachments, and food coloring. It is also desirable to have a thermometer, but you can do without it.
There is quite a lot of decor in the Easter style from meringue and it is enough to decorate all Easter cakes at once.
In addition, you can prepare such decor in advance and store it in a hermetically sealed container. This colored meringue can be used to decorate not only Easter cakes and Easter, but also cupcakes, pastries and cakes.
Ingredients:
Meringue:
- sugar - 170 g
- egg white - 100 g
- icing sugar - 30 g
- food colorings
Glaze:
- powdered sugar
- lemon juice
Step by step recipe
1. First, let's prepare the meringue.
Pour 100 g of proteins into a bowl and add 170 g of sugar.
We put a bowl with proteins and sugar on a steam bath. The bottom of the bowl should not touch the water.
2. We heat the proteins with sugar, stirring constantly until the sugar is completely dissolved. The protein temperature should be between 40 and 50 degrees. If there is no thermometer, then we are guided by the sugar, when it is all dissolved, we remove it from the heat. Do not overheat the proteins to prevent them from curdling.
Remove the prepared proteins with sugar from the heat and pour into a clean and dry bowl.
3. Beat the whites immediately. Beat at low speed first and gradually increase to maximum. I want to draw your attention to the fact that the bowl in which we beat the meringue and the whisk must be absolutely dry and low-fat, and when dividing the eggs, not a single gram of yolk should get into the white.
The meringue should be dense and keep its shape well. Depending on the power of the mixer, this can take from 7 to 12 minutes.
4. At the very end, when the meringue is completely ready, add 30 g of powdered sugar so that the meringue is more stable and does not lose its shape. Beat with powder for about 1-2 minutes.
5. Transfer the meringue to 4 small bowls. We paint each meringue in a different color. For coloring, I use food grade gel and paste dyes. I painted the meringue blue, pink, green and yellow. I left about 4 part of the meringue white.
6. I will use disposable cooking bags with different attachments to deposit the cream. I buy them on Aliexpress.
We transfer the cream to culinary bags.
7. Previously, I printed these ovals of eggs on paper. We put them under the parchment paper.
8. Fill the egg oval with white meringue. We put a wooden stick and press it down quite a bit.
9. Apply multi-colored patterns on top. I make stripes using different attachments, alternating colors. The height of the eggs is 8 and 9 cm.
In this way, I made 3 eggs from meringues.
10. From the remaining meringue, I planted multi-colored stars and flowers. Beza made leaves from green color.
11. We put all the decorations in a cold oven and turn it on at 80 degrees. Dry the meringue for about 2 hours. The larger the meringue product, the longer it takes to dry.
12. The jewelry is dry. This is how they look from the other side. They come off the parchment very easily.
13. Let's decorate the cake with such meringues, but first you need to prepare the icing. I will prepare icing from powdered sugar and lemon juice for one small cake, if you cook more icing, it is better to use a mixer instead of a spoon.
Lemon juice can be substituted with raw egg whites.
14. There are no clear proportions, you need to look at the consistency. The icing should be thick enough not to drain off the cake.
15. We immediately decorate the cake with the prepared icing.
16. While the frosting is not frozen, insert the meringue egg in the middle. Put meringue flowers on the sides.
17. So beautifully and festively you can decorate all the cakes.
Decorations from meringues for Easter cakes turned out to be beautiful and bright. It is very convenient to prepare it in advance and store it in an airtight box in a dark place. You can store meringues for 1 month. Also, such decorations can be used for cakes.
