Easter cottage cheese with candied fruits turns out to be very tender, melting in your mouth. It is moderately sweet, with pieces of candied fruits and nuts. A real pleasure!
Choosing good foods is very important for Easter cottage cheese. Curd must be fatty and natural. It is also not worth saving on butter. Use butter without vegetable oils in the composition. The taste of Easter cottage cheese will depend on the quality of these products.
The process of making Easter from cottage cheese itself is quite simple and will not take much of your time.

Ingredients:
- cottage cheese 9-20% - 1 kg
- cream - 10-20% - 400 ml
- eggs - 5 pcs.
- butter - 200 g
- sugar - 200 g
- raisins - 100 g
- candied fruits - 100 g
- nuts (any) - 50 g
- vanilla sugar - 10 g
Step by step recipe
1. To prepare Easter cottage cheese, we need such a metal form. You can also use plastic or wood. If you do not have such a mold, then you can use a colander, the most common one that you have at home. You will also need gauze, which we will fold in two.
2. Put 1 kg of cottage cheese in a chopper bowl. Grind it to a homogeneous pasty mass. It is very important that the curd is not sour. Also, cottage cheese can be wiped through a sieve or scrolled in a meat grinder twice.
3. Transfer the curd mass to a bowl. Add 200 g of butter to it, at room temperature. Mix everything well until smooth.
4. Break 5 eggs into a saucepan.
5. Add 200 g of sugar and 10 g of vanilla sugar.
Mix everything with a whisk until smooth.
6. Pour 400 ml of cream with 10 or 20% fat to the egg mass. We mix everything and put on fire.
7. Bring the mass to a boil over medium heat. After boiling, reduce the heat to a minimum and cook for another 3-4 minutes until thickened. At the same time, we constantly interfere so that it does not burn.
Remove the pan from the heat and let cool slightly.
8. Add 50 g of chopped nuts, 100 g of washed raisins and 100 g of candied fruits to the already prepared curd oil mixture.
We mix everything.
9. Add the already slightly cooled custard mixture to the curd mass. We mix everything.
10. We put the mold into which we will pour Easter in a bowl with high sides. Cover with double folded gauze. Gauze, first you need to wet and squeeze well.
We try to lay out Marya so that the folds are on the edges of the form, and the edges are without folds. The height of my mold is 12.5 cm.
11. Pour the prepared curd mass into a mold.
Gently wrap the ends of the gauze up.
12. The load must be placed on top. I used a stone mortar. You can also put a container of water.
We put this whole structure in the refrigerator for about 12 hours. During this time, all the serum will flow out.
13. Pasochka has already stood for 12 hours. Cut the uneven edges with a knife. Cover the form with a plate and turn over. Carefully remove the mold and gauze.
14. Decorating cottage cheese Easter. I use gold colored sugar beads. Decorate the bottom with candied fruits for Easter.
