Ingredients:
Biscuit:
- boiled beets - 250 g
- eggs - 3 pcs.
- vegetable oil - 1 tbsp. l.
- starch (wheat flour) - 80 g
- salt - 1 tsp l. (no slide)
- sugar - 1/2 tsp l.
Filling:
- slightly salted herring - 1 pc.
- cream cheese - 300 g
- pickled cucumber - 1 pc.
- fresh dill - bunch
Step by step recipe
1. First, bake a sponge cake for a roll.
1 boiled and already peeled beets weighing 250 g three on a fine grater.
Divide 3 eggs into yolk and white. Pour the whites into a clean, dry bowl, and add the yolks to the grated beets.
Pour 1 tsp here in a bowl with beets. without a slide of salt and 1 tbsp. l. vegetable oil. We mix everything.
2. Pour 80 g of starch into the prepared mixture and mix. Starch can be replaced with flour.
3. Beat the prepared proteins separately. As soon as the proteins are slightly foamed, add the floor to them. tsp sugar and beat until firm, stable foam. It is very important that the whites are well beaten. Due to the air in the proteins, you get a nice fluffy sponge cake.
4. Add the third part of the proteins to the beetroot mixture and mix with a spatula or spoon.
5. Add all the other whipped whites and mix gently until smooth. The dough should remain airy.
6. Transfer the finished dough to a baking sheet covered with parchment paper. We form a rectangle about 28 * 38 cm in size. The baking paper should be of high quality and smooth, the biscuit will stick to the cheap rough paper.
7. We put everything in the oven preheated to 180 degrees. We bake for about 13-15 minutes.
Transfer the baked sponge cake to the board and let it cool.
8. While the biscuit is cooling, prepare the filling.
Finely chop a small bunch of dill.
Cut 1 pickled cucumber into small cubes.
9. Take 300 g of cream cheese and add dill and chopped cucumber to it. Mix everything well.
10. The biscuit is cold. Lubricate it evenly with the prepared mixture.
11. Cut 2 fillets of one salted herring lengthwise into two parts.
On a sponge cake, greased with a creamy filling, put the prepared herring fillet on one edge.
12. We roll everything up while helping with parchment paper.
13. We wrap the roll in plastic wrap and put it in the refrigerator for at least an hour or even overnight.
14. We take the finished roll out of the film and cut into portions. Put the roll beautifully on a dish and serve.
The beetroot roll with herring turned out to be very tasty and beautiful. It perfectly combines tender beet sponge cake with soft cream cheese and lightly salted herring.
