Delicious pea soup for every day. Everything is perfect in it: delicate texture, unsurpassed taste and awesome aroma of smoked meats. Few people would refuse such a pea soup!
But spicy garlic rolls give a special zest to this soup. They are not at all difficult to prepare. However, even without them, such a first course will be self-sufficient.

Preparing pea soup with garlic rolls and hunting sausages is quite simple. It is only important not to forget to prepare the peas in advance and soak them for at least 2 hours.
Also, I do not recommend replacing hunting sausages with other smoked sausages in this recipe, because the dish will lose its taste.

Ingredients (per 4L pot):

pork (beef) ribs - 500 g

potatoes - 200 g

peas - 1 tbsp.

hunting sausages - 4 pcs.

onion - 1 pc.

carrots - 1 pc.

salt - 1/2 tbsp. l.

frozen dill (fresh) - 1 tbsp. l.

bay leaf - 1 pc.

Garlic rolls

flour - 80-100 g

eggs - 1 pc.

water - 20 ml

butter - 20-30 g

garlic - 1-2 cloves

dill - 1 tbsp. l.

salt - a pinch

Step by step recipe

1. Before cooking the soup, rinse well 1 cup of peas and fill it with water. Let the peas infuse for 2 hours, or better longer. I soaked it overnight.

2. Take 0.5 kg of ribs and cut them into smaller pieces.
Place the ribs in a 4 liter saucepan and fill them with water so that the water covers the ribs. I use pork ribs, but beef ribs can also be used. We put the pan on high heat.

3. As soon as the water boils, remove the pan from the heat. Pour out this water and rinse the ribs and the pan. Put the ribs back in the saucepan and pour in about 3 liters. clean water.

4. Boil the broth after boiling over low heat for about 30 minutes.

5. After 30 minutes, add the already swollen peas to the pan. Cook for about 40-50 minutes more.
After boiling, remove unnecessary foam with a spoon. If in the future foam is formed during cooking, it is advisable to remove it. This will not affect the taste of the soup, but it will look prettier and more appetizing.

6. While the peas with ribs are being cooked, knead the dough for rolls.
Break the egg into a bowl and pour 20 ml of water, add a little salt. Mix everything with a whisk.

7. Pour about 80-100 g of flour here and knead the hard dough. Cover the dough with a lid or cling film and let it rest for 15-20 minutes.

8. Cooking the garlic filling.
We take 20 g of soft, but not melted butter and squeeze 1-2 cloves of garlic through a press. Add 1 tbsp to this. chopped dill, I use frozen.
We mix everything.

9. The dough is infused, roll out a long rectangle from it.
Lubricate the dough sheet over the entire surface with the prepared butter-garlic filling.

10. We roll the dough into a roll. We pinch the edge of the roll well.
Cut the prepared roll into small pieces.

11. Cut 200 g of potatoes into small cubes.

12. The peas with ribs are already cooked. Remove the ribs from the pan and let them cool slightly.
Put potatoes in a saucepan and cook the soup for about 10 minutes.

13. Preparing the sauce for the soup.
Cut 1 onion into cubes.
1 carrot, three on a fine grater.

14. Put the prepared onion in a frying pan with a small amount of vegetable oil. Pass until golden. Here, to the onion, add the grated carrots and sauté until the carrots are soft.

15. We take out the bones from the already slightly cooled meat. Cut the meat into small pieces.
Cut 4 hunting sausages into small pieces.

16. Put the pieces of meat back into the soup, and put the hunting sausages here.

17. Salt the soup with about half a tablespoon. salt. We mix everything.
Also add prepared garlic rolls to the soup one by one.

18. Cook for another 5 minutes and add the vegetable sauté. Pepper the soup to taste and add 1 bay leaf. We mix everything.

19. When the soup boils, add greens to it. I added a tablespoon of frozen dill. We mix everything. The soup is ready, you can serve it.

The pea soup with garlic rolls turned out to be very tasty, aromatic and satisfying. It is not difficult to prepare. Also, such a soup can be cooked without rolls, it will also turn out very tasty.
