If you want to diversify your daily menu, then prepare such a mushroom soup. It is delicate, velvety and aromatic - this is the most delicious mushroom puree soup. It has the tenderness of a creamy taste, and velvety consistency, and a mushroom aroma... Your family will certainly ask for a supplement.
And such a soup is prepared very simply and rather quickly. It can be cooked in water or in pre-cooked meat broth. It will be tasty anyway. The products for the soup are all the most common and affordable.
This mushroom puree soup is delicious to serve with croutons or small croutons.

Ingredients:
- water (broth) - 1.5 l
- potatoes - 400 g
- fresh champignons - 300 g
- carrots - 1 pc.
- salt - 0.5 tbsp. l.
- bay leaf - 1 pc.
- ground sweet paprika - 0.5 tsp l.
- ground black pepper - to taste
- ground nutmeg - to taste
Step by step recipe
1. First, let's prepare the ingredients.
Cut one onion into cubes.
First, cut one carrot lengthwise into 4 parts, and then cut a quarter into circles.
2. Cut 400 g of already peeled potatoes into small pieces.
3. Put chopped onion in a preheated pan with a small amount of vegetable oil. Pass the onion until golden. Add the prepared carrots to the podzolized onions. Saute for a few more minutes until the carrots are soft.
4. We transfer the cooked sausage to a 4-liter saucepan in which we will cook the soup.
Put the chopped potatoes here. We fill everything with 1.5 liters of water or broth.
We put everything on the fire and cook after boiling over low heat for about 20 minutes, until the vegetables are ready.
5. While the vegetables are boiling, prepare the mushrooms.
Cut 300 g of washed mushrooms into small cubes. Put the chopped mushrooms in a dry hot frying pan. Fry the mushrooms over the highest heat until all the liquid has evaporated.
6. The vegetables are already cooked. Remove them from heat and puree with a hand blender.
7. We put the saucepan on the fire again.
Put prepared mushrooms in mashed potatoes, pour 150 ml of cream with 10% fat here.
8. Salt everything with about half a cup. l. salt, put bay leaf and pour 0.5 tsp. ground sweet paprika and a pinch of ground nutmeg and black pepper to taste.
We mix everything.
Bring the soup to a boil and simmer over low heat for another 1-2 minutes. Remove the finished soup from the heat.
When serving, sprinkle the soup with herbs, I sprinkled with green onions. The soup can be served with bread or croutons.
