Pancakes are among the many popular breakfast dishes. Many people love them and prefer to start their day this way. There are a lot of recipes for this dish. Pancakes are kneaded on various dairy and fermented milk products, with the addition of soda, baking powder or yeast.
Each recipe is good in its own way. But recently I learned about another option for how you can cook pancakes so that they turn out to be fluffy and airy. It turned out that the whole secret is in hot kefir. It is because of its temperature that such a wonderful structure is obtained. The recipe is very simple, everyone can do it, so I recommend it.
Ingredients:
Kefir - 1 glass
Sugar - 2 tablespoons
Baking powder - 1 tsp
Chicken egg - 1 pc.
Flour - 1.5 cups
Vegetable oil - 70 ml.
Step by step recipe:
1. To prepare fluffy pancakes on hot kefir, prepare the necessary set of ingredients. Sift flour with baking powder several times through a fine sieve.
2. Break the egg into a bowl and add granulated sugar. Whisk with a fork until smooth. The amount of sugar is approximate, you can add it to your liking. If you want the pancakes to be more flavorful, add a spoonful of vanilla sugar.
3. Pour kefir of any fat into a small saucepan and put on fire. Warm it up while stirring. It should be hot, but not boiling.
4. Add the egg-sugar mixture to the stewpan with hot kefir. Mix everything thoroughly to prevent the eggs from curdling.
5. Add flour and baking powder and knead the dough. The step of sifting the flour is very important, so if you want to get fluffy pancakes, it's best not to ignore it.
6. The dough should be quite thick, but at the same time airy, with air bubbles.
7. Heat vegetable oil in a skillet and line the dough in small flat cakes. Fry them over medium heat on both sides until golden brown. Use a wooden spatula to remove them from the pan and place them on a paper towel to get rid of excess vegetable oil.
8. Delicious custard pancakes are ready.
Serve hot. The pancakes will perfectly complement a cup of tea and jam.
