Today I want to offer you to cook very airy, light, sweet donuts on kefir that fly away in one sitting in my family, no matter how much I cook them.

It takes no more than 15 minutes from the beginning of kneading the dough until the first batch of crumpets hits the plate.

My household, especially children, love them very much. I advise you to try it too! 🥰

📕Ingredients for making crumpets: 🥙

Kefir - 250 ml
Sugar - 5 tbsp. l.
Chicken egg - 1 pc. (large)
Vanillin - a pinch
Fine salt - a pinch
Soda - 1 tsp l.
Flour - 3 stack. (about 480 g)
Vegetable oil - 2 tbsp. l. (in dough) + for frying

Take a deep wide bowl and drive an egg into it. Then add sugar, vanillin and salt ...

Beat everything with a whisk until the grains dissolve... Although you can use a mixer. Pour in 2 tablespoons of vegetable oil and mix everything well again. Set aside for now.

Now we take kefir, it should be at room temperature, and if you just took it out of the refrigerator, then just heat it up a little in the microwave. Add baking soda and wait a few minutes until the mixture begins to foam.

Then we mix the kefir mass with the egg-sugar mass. Little by little, we begin to add the sifted flour.

Knead the dough gradually. It should not be too steep, after kneading there will be some stickiness. It is very convenient to work with such a test on a silicone mat. If you don't have a rug, just dust the countertop with a little flour, otherwise the cut out donuts will stick.

Roll out the dough to a thickness of about 2 cm and cut out the crumpets using any cookie cutter or a regular glass. We collect the scraps in a lump, roll them out again. And so on, we repeat until the dough runs out.

Pour some vegetable oil into the pan, heat it up. We spread the crumpets and fry them on low heat under the lid for 3-4 minutes, until a beautiful golden crust is formed.

Then we turn over and fry the second side for about 2 minutes, until the second side is also brown. Remove the finished crumpets from the pan onto a plate with a paper towel so that the excess oil is absorbed.
