Pearl barley is a healthy and tasty porridge that makes excellent side dishes for meat and fish dishes. In addition, pearl barley is very inexpensive. But many housewives are afraid to cook it, because they believe that barley porridge is viscous, sticky and tasteless. This is not the case if it is cooked correctly.
In order to properly cook barley, it must first be soaked for at least 2-3 hours, and ideally for the whole night. With this method of cooking, the porridge is much tastier. Believe me, according to this recipe you will definitely like pearl barley with vegetables! It turns out fragrant due to the addition of vegetables, hearty and tasty. This kind of porridge can be cooked during fasting, it is wonderful filling.

Ingredients:
- water - 2.5 cups
- pearl barley - 1 glass
- carrots - 1 pc.
- tomato - 1 pc.
- onion - 1 pc.
- vegetable oil - for frying
- salt to taste
- ground black pepper - to taste
Step by step recipe
1. We wash one glass of pearl barley well with water. Pour the washed cereals with water and leave for at least 3 hours, or better for the whole night.
2. The barley is already swollen, we drain the water. Pour the prepared cereal into a saucepan and pour 2.5 cups of water.
3. We put on fire and cover with a lid. As soon as the water boils, we reduce the heat to minimum. Cook the barley until all the liquid evaporates, it takes about 30-40 minutes.
4. While the porridge is cooking, prepare the rest of the ingredients.
Cut 1 onion into cubes.
1 carrot, three on a coarse grater.
5. Cooking vegetable sautéing.
Put chopped onion in a preheated pan with vegetable oil. Pass the onion until golden.
When the onion is golden, add grated carrots to it. Mix everything and sauté for a few more minutes until the carrots are soft.
6. Cut one tomato into slices and then cut into cubes.
Add the chopped tomato to the vegetable sauté.
7. Mix everything and cover with a lid. Simmer vegetables for 3 minutes over low heat.
8. Add the already cooked barley to the prepared vegetables. Salt everything to taste and pepper. Mix porridge with vegetables.
9. Cover the pan with a lid and simmer for another 2 minutes to combine the flavors. Serve the finished dish hot.
Barley with vegetables turned out to be very tasty and aromatic. It is not at all difficult to prepare. Properly cooked porridge will become a favorite dish of your household.
