A very simple and quick snack for every day from zucchini and carrots in Korean. This is a delicious and truly versatile salad appetizer. It is suitable for every day instead of vegetable salad. It can be served on a festive table. And she is the best suited to meat dishes on the grill.
Korean-style zucchini and carrot salad turns out juicy, fresh, moderately spicy and very aromatic. By the way, you can adjust the spiciness of the appetizer to your liking by adding more or less seasoning.
Such a salad is prepared very simply, quickly and without heat treatment. Vegetables are pickled in just a couple of hours, but the whole taste and aroma of the salad is best revealed after a day. Also, such a snack can be stored in the refrigerator for several days without any problems. So you can safely cook a large portion, it's very tasty!

Ingredients:

  • young zucchini - 1 kg
  • carrots - 300 g
  • onion - 1 pc.
  • Korean-style carrot seasoning - 30 g
  • vinegar 6% - 3-4 tbsp. l.
  • vegetable oil - 3 tbsp. l.
  • sugar - 3 tbsp. l.
  • garlic - 5 cloves
  • salt - 2 tsp l.

Step by step recipe

1. We take 1 kg of young zucchini and three of them on a grater for Korean carrots. In terms of quantity, I got 3 zucchini. It turns out here such a long noodles from zucchini.
Likewise, three fresh carrots. It will need 300 g. These are two not very long, but plump carrots. It turns out such a beautiful carrot noodles.

2. Cut one onion in half and cut into half rings. Put the onion in a bowl with the zucchini and carrots.

3. Pour 2 tsp into a bowl for the prepared vegetables. l. salt, 3 tbsp. sugar, here we squeeze 5 cloves of garlic through a press, pour 3-4 tbsp. 6% apple cider vinegar and add 30 g of Korean carrot seasoning, calculated for 1 kg of carrots.

4. Pour 3 tbsp into a dry, clean stewpan. l. vegetable oil and put on fire. As soon as the oil boils, remove it from the heat and immediately pour it over the seasoning with vegetables. Hot oil will better reveal the aromas of the seasoning.

5. Mix everything thoroughly. Transfer the finished snack to a smaller container and cover with a lid. We put everything in the refrigerator to marinate for a day, but after 5-6 hours, the appetizer is already delicious. And after a day it becomes even tastier.

Serve the finished vegetable appetizer on the table. It goes well with any meat dishes. It is not difficult to prepare, but it turns out to be moderately spicy and aromatic.
