In general, it doesn't smell like 100% real muffins, to be honest, and I only use this name because muffin tins are used for cooking.
It would be more correct to call them baskets with onion filling - but baskets as such here also do not work (because of the yeast dough).
Probably the smartest thing to call it mini-pies.
However, what's the difference what to call? the main thing is that it turns out tasty, and also satisfying.
So, let's take it.
For the test:
• 250 g of premium flour;
• A quarter of a bag of dry yeast;
• A teaspoon (no slide) of salt;
• A teaspoon of sugar;
• 150 milliliters of warm water;
• A couple of tablespoons of vegetable oil;
For filling:
• 500 grams of onions - not spicy, not bitter. Ideally - schalota, but our prices are not very adequate, so you can take any;
• 200 grams of bacon or ham (tastes better with bacon);
• 2 eggs;
• 100 grams of thick sour cream (not very sour, sour cream with a pronounced acid is not needed here. Ideally, light sourness and good creaminess);
• From spices - thyme, nutmeg, pepper and salt to taste;
• A little oil for frying.
How we cook:
Dissolve the yeast in water with a little flour and sugar. We are waiting for the appearance of foam on the surface - this means that the yeast came to its senses and began to work.
Add flour, salt, add butter and knead the dough. We cover with a napkin, leave to come up - ideally, we will start making cupcakes after the second approach.
In the meantime, we are making the filling.
Peel the onion and cut into quarters into rings. Cut the bacon or ham or brisket - whichever you choose - into cubes.
Pour a little oil into a frying pan, fry the meat until golden brown, take it out. We send onions to the same fat and fry until translucent, after which we add thyme, salt, pepper, send the meat back, and, adding a couple of water, simmer under the lid for about ten minutes.
Let the onion cool.
Beat the eggs, add sour cream to them, stir this mass and mix with the onion.
Now we preheat the oven to 200 degrees, and divide the dough into about 12 parts. We make a small cake from each part and put it in a mold so that it looks like a basket.
We send it to the oven for five minutes.
We take out, put the onion filling in tins with dough and now bake to the end - about 15 minutes.
