Amazingly delicate and awesomely delicious cake for the holiday and not only! This cake can be prepared without an oven. It is fast enough and not difficult to prepare. And the products are all the most affordable. The cakes are baked in a pan, which helps a lot when there is no way to bake in the oven.
To taste, the cake turns out to be the most delicate, melting in the mouth. The aromatic and soft curd cakes are paired with the vanilla custard for a funky, creamy, ice-cream-like flavor. And pieces of dried apricots complement the whole ensemble, diluting the sweetness with a slight sourness.
If you don't like dried apricots, then you can put canned peaches or pineapples, as well as any berries in season, instead.
This ovenless cake is perfect for a noisy holiday table and for a quiet family celebration. Take note of the recipe for this cake in the pan, it will definitely become one of your favorites!
Ingredients:
Cakes:
- flour - 300 g
- cottage cheese - 200 g
- sugar - 150 g
- eggs - 1 pc.
- soda - 1 tsp l.
- vinegar 9% - 1 tsp l.
Cream:
- milk - 500 ml
- sugar - 200 g
- butter - 150 g
- flour - 3 tbsp. l.
- eggs - 1 pc.
- vanilla sugar - 10 g
- dried apricots - 100 g
Step by step recipe
1. First, knead the curd dough for the cakes. We transfer the cottage cheese to the chopper bowl, add one egg and 150 g of sugar. Grind everything until smooth.
2. We transfer the resulting curd mass into a bowl in which we will knead the dough.
We extinguish a teaspoon of soda with one teaspoon of 9% vinegar and immediately add to the curd mass. We mix everything.
3. Add flour to this mass in several approaches. Knead until a soft and homogeneous dough is obtained. You may need a little less flour or more, depending on the flour you are using.
4. Tear off a small piece from the prepared dough and roll it out with a thickness of about 1.5 - 2 mm.
I cut the cakes with a sliding confectionery ring with a diameter of 18 cm. Also, the cakes can be cut using a lid or plate of a suitable size.
5. Put the cake in a dry preheated pan. Fry over low heat on both sides for several minutes until light golden brown. From this amount of dough, I got 9 cakes with a diameter of 18 cm.
6. Now let's make the custard. Pour 200 g of sugar, vanilla sugar into a saucepan and break an egg. Grind everything with a spoon until smooth.
7. Pour flour here and mix well again.
8. Add half a liter of milk, stir until smooth and set on fire.
9. Cook over low heat, stirring constantly, until thickened. Leave the custard base to cool.
10. Beat the softened butter a little with a mixer.
11. And then add the custard base to it, one tablespoon at a time, whisking constantly. It is important that the butter and custard base are at the same temperature.
12. Cut dried apricots into small pieces. Before that, you need to wash it well and pour boiling water over it for 5 minutes.
13. We fold the cake. We put the first cake and set the desired diameter of the confectionery ring on it.
Put the cream on the cake and distribute it evenly with a spoon. Put cut pieces of dried apricots on top of the cream. Cover with the following cake.
14. This is how we fold the whole cake.
Leave 2-3 tablespoons of cream to decorate the cake on top.
15. We cover the assembled cake with cling film and put in the refrigerator for at least 6 hours, or better longer.
16. We take the cooled cake out of the refrigerator and take it out of the ring.
Cover the top of the cake with the remaining cream.
17. Three pieces of chocolate on a grater. Decorate the top and bottom of the cake with grated chocolate.
The cake is ready, you can serve it on the table.
The cake turned out to be very tasty, tender and soft. The taste is somewhat reminiscent of an ice cream and just melts in the mouth.
