A simple and delicious eggplant appetizer in the oven. This appetizer is familiar to many and everyone likes it. In my opinion, the combination of products in it is ideal: tender eggplants with a piquant hint of garlic, juicy tomatoes and stringy cheese. And I really like it when the cheese is not on top, but as an interlayer.
Such an eggplant and tomato appetizer is prepared very simply and quickly, it turns out a lot of it. Due to the fact that vegetables are baked in the oven, the dish turns out to be as dietary as possible.
This appetizer can be prepared for every day and for a festive table. It is bright and beautiful, besides, it is tasty, both warm and cold.
In eggplant season, be sure to make such a quick and simple dish of eggplant and tomatoes with a layer of cheese. This is delicious!

Ingredients:

  • tomatoes - 4 pcs.
  • eggplant - 2 pcs.
  • cheese - 200 g
  • parsley - 1 bunch
  • garlic - 2 cloves
  • salt - ½ tbsp. l.
  • water - ½ tbsp.

Step by step recipe

1. First, let's prepare the eggplant.
Cut them into rings and put them in a bowl. Salt the chopped eggplants, mix and leave them for 20 minutes so that they let the juice out and the bitterness leaves them.

2. While the eggplant is salting, prepare the rest of the ingredients.
Squeeze the garlic through a press and fill it with cold drinking water.

3. Rub the cheese on a coarse grater.
Cut the tomatoes into slices.

4. Cover the baking sheet with parchment paper and grease it with vegetable oil.
After 20 minutes, be sure to wash the eggplants with cold water. Dip each eggplant circle in a bowl of garlic water and place on a baking sheet.

5. Put grated cheese on top of each eggplant in a small slide. Put tomato slices on the cheese.
From this amount of ingredients, I got two baking sheets of eggplant with tomatoes.

6. We send the appetizer to the oven preheated to 180 degrees. We bake for about 25 minutes.
We check the readiness with a fork. The eggplant should pierce without difficulty.

7. Chop the parsley finely.
Sprinkle the baked appetizer with parsley.

Eggplants with a layer of cheese turned out to be very tasty and original. Such an appetizer can be prepared not only on a weekday, but it will also look beautiful on a festive table. This appetizer can be served both cold and warm.
