Ciabatta Buns Recipe
Dough preparation
Stir the yeast in room temperature water.
Add wheat flour with wholemeal rye flour there.
Stir flour with yeast water, cover with foil, let stand at room temperature for 30-40 minutes.
Then refrigerate until next day or 12 hours.
Kneading the main dough
I stir 240 g of water 320 g of bread flour (this is flour of the 1st grade) using a mixer. I leave the dough for half an hour.
I add 10 g of salt to 20 g of water and stir everything well.
I spread yesterday's dough from the refrigerator into the dough and start kneading for 6-8 minutes.
After 6-8 minutes, remove the dough again and increase the speed.
Knead for another 3-4 minutes, after about a minute, add salt water.
When the dough begins to move away from the walls, you can finish.
Transfer the dough to a greased container and pick up with wet hands.
Cover with a lid or plastic and leave at room temperature for 2.5-3.0 hours.
Every 30-40 minutes, the dough needs to be kneaded, only 3-4 kneading.
I lift the dough and fold it. Then I unfold it again, lift it up and fold it.
Turn on the oven at 250 ° C degrees. The oven should heat up for 40 minutes.
It should warm up one baking sheet on which you will spread the ciabatta, and the second baking sheet on which you will pour water in order to create steam.

Forming the ciabatta
Sprinkle the table with flour: you can use regular flour, you can take semolina if you like crisp.
Sprinkle flour on top of the dough too, and form a rectangle with gentle movements.
Divide it confidently into 4 parts and dust the sides with flour.
Move these wonderful ciabatta on parchment, which also sprinkle with flour.
Baking bread
- I put the ciabatta in the oven.
- Pour half a glass of hot water onto the second baking sheet.
