Unusual Forest Moss cake comes from Poland. It impresses with its bright and rich green cakes. You will be surprised, but there is not a drop of chemical dye in this cake.
Its taste is very balanced: the soft biscuit goes well with butter cream, and the abundance of berries emphasizes the taste and adds a slight sourness.
The secret of green cakes is that spinach is added to the dough, which is a natural dye. And no, in the finished cake, the taste of spinach is not felt at all. If your guests do not know the composition, they will never guess that there is spinach in the cake.
This cake is perfect for any occasion. He always delights with his appearance and amazing taste. Well, preparing Forest Moss is not so difficult. By the way, in winter, when there are no fresh berries, this cake can be decorated with pomegranate seeds.

Ingredients:

Biscuit:

  • spinach - 400 g
  • coarse flour - 250 g (2 tbsp.)
  • chicken egg - 4 pcs.
  • sugar - 200 g
  • refined sunflower oil - 150 ml
  • baking powder for dough - 3 tsp l.

Butter cream:

  • Philadelphia cheese - 400 g
  • cream at least 30% fat - 400 ml
  • blueberries - 1 tbsp.
  • raspberries - 1 tbsp.
  • icing sugar - 3/4 tbsp.

Step by step recipe

1. First, let's prepare the spinach. If you are using frozen spinach, thaw it and squeeze out any excess liquid. Fresh spinach should be washed and chopped.

2. Transfer the spinach to the chopper bowl. Add 100 ml of refined sunflower oil. We grind everything.
Set aside the chopped spinach.

3. Now let's get down to making a biscuit.
We take coarse flour and add baking powder to it. We mix.

4. Separate four proteins into a separate bowl. This must be done carefully so that the yolk does not get caught.

5. Beat the whites gradually adding sugar, about 1 tbsp. l. with an interval of 15-20 seconds. Beat until firm foam.

6. Add one yolk to the whipped egg whites without stopping whipping.

7. Add chopped spinach to the beaten eggs in 2 stages. Stir until smooth.

8. Pour the remaining sunflower oil into this mass and beat again.

9. Now you need to add flour to the dough. Gently knead the dough with a spatula, adding flour in small portions in 3-4 approaches. The dough must be kneaded gently and briefly so that it does not settle.

10. I bake the biscuit in a ring with a diameter of 22 cm. We spread the finished dough into a mold. Spread it out with a spatula to create an even top.

11. We bake at a temperature of 180 degrees. approximately 50 minutes.

12. Put the finished biscuit on the wire rack to cool.

13. Now let's start preparing the cream. To do this, take cold cream and pour it into the mixer bowl. Immediately add cream cheese and powder to the cream.
Begin to beat the cream at a low mixer speed, gradually increasing it. Beat the cream until it becomes airy and keeps its shape well.

14. Approximately 4 tbsp. l. put the cream in a bowl. We will use them to align the cake on the sides.

15. Add blueberries and raspberries to the remaining cream. Do not forget to leave some of the berries to decorate the cake on top.
Gently mix the cream with berries.

16. Remove the cooled biscuit from the mold and cut into 3 parts. Cut off the baked top of the biscuit so that it does not spoil the color.

17. We start assembling the cake. We put the biscuit, and we lay out half of the cream with berries. Put the second biscuit on top and spread all the remaining cream.

18. Using the cream, which was left without berries, smooth out the sides of the cake.

19. Grind the third biscuit cake with your hands into crumbs.

20. Sprinkle the resulting crumb over the top and sides of the cake.
Decorate the top of the cake with raspberries and blueberries.

There is no spinach in this cake. If you cook a cake like this for your guests and don't tell them that it contains spinach, they will never guess. So make a cake like this and surprise your guests. Moreover, this cake is delicious!
