The preparation is very simple. You don't need to boil or sterilize anything. It turns out very tasty and fragrant adjika! I use it as a seasoning for various dishes. I add to borscht, casseroles, and sauces. I really like meat with such a seasoning. And a fish.

HOW TO COOK:

First, I "deal" with hot pepper. I definitely use gloves! I cut the pepper lengthwise and remove the stalk and seeds.

I grind peeled peppers in a meat grinder.

I also peel and chop the garlic. And here - walnuts. I pre-fry them in a dry frying pan. This makes the seasoning more aromatic. I always use walnuts for this seasoning.

Greens. I take parsley and basil. I chop with a knife.

I add chopped herbs, spices and salt to the pepper, garlic and nuts. The spices here are coriander peas and mustard seeds. Grind in a mortar or coffee grinder. It may seem like a lot of salt. Yes! There is a lot of salt! It's not a mistake! This is not the adjika that is eaten with spoons. I use this one as a condiment.

I mix all the ingredients and put them in jars. I put it in the refrigerator and don't open it for at least a month. Adjika should be infused. And then her real taste is revealed!

I add such adjika to dishes quite a bit! It should be borne in mind that it is very salty and spicy. But the dishes change with her! It turns out very tasty meat in a marinade with such a seasoning. And vegetable casseroles are much more flavorful! Try it. This is a delicious addition to many dishes! For lovers of spicy things - what you need!
