A simple and hearty homemade soup. Quite thick, can replace a whole meal.
Ingredients:
300 gr. minced meat
3 pcs. potatoes
carrot
onion
greens
2.5 l of water
salt
pepper
Bay leaf
vegetable oil
tomato paste
millet
bell pepper
How to cook:
1. Peel and grate onions or mince them.
2. Add chopped onion, salt and ground black pepper to the minced meat to taste, as well as pour in a small amount of water, so the minced meat will be more juicy. Knead the minced meat well. In order for the meatballs to better keep their shape and not fall apart during the cooking process, the minced meat must be kneaded or beaten off. You can add 1 tsp to it. l. starch.
3. Form meatballs from the minced meat, use a teaspoon to put a portion of the meat on your hands and roll up a dense ball. The meatballs must be the same size and shape.
Arrange the meatballs on a plate at a short distance from each other and put in the freezer.
4. Peel and cut the potatoes into cubes or in any way convenient for you.
5. Put the potatoes in a saucepan, add about 2.5-3 water and bring to a boil, reduce heat and cook further at a low boil. Add pepper and bay leaves.
Pour about half a glass of washed millet into boiling water. Also, rice, buckwheat, vermicelli, semolina or other cereals to your taste are suitable for this soup.
6. As soon as the potatoes are cooked, dip the meatballs one by one into the boiling soup. Bring to a boil and remove the foam.
Cook the meatballs for 7-10 minutes from the moment the water boils.
7. At the same time, peel the bell pepper from the seed and cut into cubes, you can use frozen. Put the pepper in the broth.
8. Grate the carrots, cut the additional onion into cubes. Fry the onions and carrots in vegetable oil with the addition of 1-2 tbsp. l. tomato paste. Lay out the fry with the soup.
9. Season with salt and pepper. Finely chop the herbs (dill, parsley and green onions). Season the dish with herbs.
Remove soup from heat and let stand, covered, for 5-10 minutes.
