If someone does not like barley porridge, it means that he simply does not know how to cook it)) It's a joke, of course, but, for example, I don't really like barley either... if I cook it according to other recipes. I'll show you how I cook barley porridge, which everyone eats. I'll reveal my little secret. It turns out very tasty!
HOW TO COOK:
I pre-soak the groats in cold water. I wash it well and fill it with water for at least 4 hours. But it is better to leave it overnight.
In a small amount of vegetable oil, fry the onion until transparent. And I add carrots. I cut the carrots into cubes. But it doesn't matter here. You can just grate it on a grater.
I will show you two versions of this dish at once - lean and with meat (I like both options, both are delicious!). You can take any meat. I love this barley with beef. I cut the meat into small pieces and fry until half cooked. I add salt and spices. For spices, I usually use a mixture of peppers.
I cook in pots. I have a la carte. But you can cook in a large pot. Or in a cauldron.
At the bottom of each pot I spread the fried onions and carrots. And then pearl barley, a small piece of bay leaf and salt to taste. These two pots will be meatless. I fill the pots about 2/3 full.
In the remaining two pots I put the fried meat, and then the cereal, bay leaf, salt and butter (in a small piece). Instead of meat, by the way, you can take fried mushrooms or pieces of smoked chicken.
And now my secret of delicious (no, very tasty!) Pearl barley porridge. I do not pour the cereal with water, but with a rich vegetable broth. As I prepare vegetable broth, I have already told, I will leave a link in the fixed comment. For 4 pots with a volume of 350 ml, I use about 800 ml of broth. It is better to fill it with hot broth.
I cover the pots with lids and put them in the oven. The oven is cold! I set the temperature to 180 degrees and count down from that moment 1 hour and 20 minutes. I usually leave the pots in the off oven for 15-20 minutes. And only then I submit.
This is how porridge looks like cooked without meat. Moreover, there is practically no fat here, but the porridge turned out to be crumbly, very tasty and aromatic! But, of course, it tastes even better with meat. Photo at the beginning of the article.
