Today I want to share a recipe for Lemon Cupcakes. These are delicious pastries for every day for coffee or tea. The result is tender, soft, retaining their freshness and pleasant taste for a long time.

Recipe:

Egg - 3 pcs.

Sugar -200gr.

Flour -200 gr.

Baking powder -10 gr.

Vanilla sugar -1 pack

Butter -180 gr.

Lemon juice -2pcs.

Lemon zest -1 tsp

Poppy - 1 tbsp.

Salt to taste

COOKING METHOD

We take 2 lemons, remove the zest from one lemon, and now squeeze lemon juice from two lemons.

Break 3 eggs into a bowl, add 200 grams of sugar, vanilla sugar. Beat with a mixer until the volume increases by about 3 times and becomes clear. Measure out 200 grams of flour, add 10 grams of baking powder and add flour and baking powder to the eggs.

We mix. Melt 180 grams of butter, cool and add to the dough, mix. The dough turns out to be not thick, I would even say watery, it should be so, you no longer need flour. Add lemon juice, zest and 1 tbsp. poppy seeds, mix, the dough is ready.

We take the molds, put the dough, I take small molds so that the muffins are for one bite. Now we put in the oven and bake at 180 degrees for 20-25 minutes, be guided by your oven.

Remove from the mold, the cupcakes are ready. By the way, lemon can be replaced with orange.
