Ingredients: chicken breast fillet, cherry tomatoes, butter, sun-dried tomato oil, garlic, small onion, salt, pepper, paprika, tomato paste, cream 20%, chicken broth, Pesto:, pine nuts (roasted), sun-dried tomatoes, sun-dried tomato oil, spice mixture of aromatic herbs, grated parmesan, tomato paste
Cooking method:
For pesto, blend all ingredients in a blender.
Salt the chicken fillet, pepper, season with paprika. Massage well. Fry the chicken in butter for 5-8 minutes on each side until golden brown. Place on a plate and cover with foil.
In the same pan, add 2 tbsp. water and fry finely chopped onion and garlic for 2-3 minutes. Then add the cherry tomatoes, cut in half, cook for 2-3 minutes until the tomatoes are soft. Then crush the tomatoes, add the tomato paste, pour in the chicken broth (if the broth is unsalted, add salt). Bring to a boil.
Add pesto and cream to skillet, stir until smooth. Add the chicken to the sauce and cook for about 5-7 minutes. When serving, you can add fresh basil leaves, pine nuts and grated parmesan.
