Saturday is baking time, right? Perhaps this is my most daring experiment with baking - but the recipe seemed too interesting. Rather, the product itself.
It is called bread and is baked in the form of a loaf of bread.
And so, in essence, this is sweet pastry, dessert. And it contains references to English pies with dried fruits - the same ones that are baked for many hours and then stored for a very long time.
Nevertheless, these cakes do not have bread as relatives. A completely independent culinary unit, and, as my intuition tells me, it is quite possible from the "ritual" European dishes. Although I can’t say anything for sure, I see references to Christmas in the ingredients.
I'll tell you right away - the recipe is designed for two hefty products. I did not dare to recalculate the gramme, but, in fact, it scatters quickly for a large family.
We take:
- Kilogram of flour
- One and a half kilograms of apples (after processing, about a kilogram will remain)
- 500 grams of dried fruits (assorted)
- Three hundred grams of nuts
- 150 grams of sugar
- 2 tablespoons cocoa powder (use a good one for pastry purposes)
- 125 ml cognac or rum
- A pinch of salt
- Soda - 2 teaspoons, you can even with a small slide. It is possible, probably, and less, but here it is at your own peril and risk.
- A teaspoon of spices - cinnamon, cloves, cardamom, nutmeg. We rub the blemish, grind everything else that needs to be done in a coffee grinder or mortar. This bouquet suggests the idea of Christmas and the "winter" of apple breads.
- Well, an egg and chopped nuts for sprinkling.
How we cook:
We peel the apples, cut out the middle, rub. Chop nuts and dried fruits with a knife. We make the base - rum or cognac, grated apples, spices, cocoa, sugar, salt, dried fruits - in general, we mix everything except flour and soda and leave for at least eight hours.
When this time passes, add soda and flour, and knead. The dough will turn out to be sticky, therefore, when molding bread (loaves, loaves), it is better to dust the board and hands with flour. You can cheer and put the dough into molds, but friends who repeated the recipe did not really succeed in the molds (maybe due to the fact that the molds themselves were iron, I would bake this in silicone ones).
Rinse with an egg on top and sprinkle with chopped nuts.
We bake at a temperature of 160-180 degrees (depending on your oven) for about an hour and a half.
