I replace the egg with flax seeds! But I don't just take and pour them into the dough. Here you need to "conjure" a little.
By the way, flax seeds are now worth a penny and are sold in all chain stores. I always have a tutu at home in reserve. I take the cheapest ones, I don't chase the "firm".
You can take a small package, or you can very profitably purchase a package of seeds weighing 1 kg. (I bought for 220 rubles). But this is if you use them often.
I take a tablespoon of flax seeds and grind it in a blender (you can use a coffee grinder). This amount (18 grams in a tablespoon) is enough for me to replace 2 eggs.
I fill it with 6 tablespoons of water, mix. I leave it for 5 minutes.
You should get a mass that is very similar in consistency to protein.
I add it to baked goods or to those dishes where the egg should be. The only thing I recommend is adding baking powder or baking soda to baked goods.
And if for cutlets (for example), then nothing is needed. Flax seeds will perfectly "hold together" all products, as would a chicken egg.
