It is somehow not budgetary to make fillings with meat, and the minced meat is rather dry and sometimes unpleasantly falls out of the pancake. Therefore, keep the ideas of other fillings, which our mothers once did and many housewives do now, so that it comes out tasty and economical at the same time.
So why bake pancakes and wrap something in them and then freeze them? And because it is very convenient and profitable. There is no need to spend money in supermarkets on such semi-finished products, your own is much more useful and sometimes cheaper.
We freeze ready-made pancakes with any filling and use if necessary. Then in a frying pan with butter, heat until crispy pancake.
How to freeze?
Very simple: baked pancakes, put the filling in them, rolled them up into an envelope and laid them out on a tray, then into the freezer for 2-3 hours and ready to pour into one bag. Next batch.
If the size of the freezer at the refrigerator allows, then several such bags of pancakes can be made so that there is a choice. Just don't forget to sign.
How to bake?

Let's continue with the fillings.
From the lung. Boil, drain the first water, in the second let it boil for 40-60 minutes. Twist the ready-made meat in a meat grinder and fry with onions. Add salt and pepper to taste.

Buckwheat. It is peculiar, but it has a place to be. It comes out very tasty and aromatic if boiled buckwheat is added to the minced meat. And of course, fry more onions with minced meat.
Meat and egg. This is a filling from Soviet childhood. It is prepared from any boiled meat, rolled through a meat grinder, then mixed with chopped boiled egg and fried finely chopped onions in butter.
From potatoes. Well, here for an amateur and quite a budget option. Mashed potatoes with... further variations - cheese, fried or green onions, herbs, grated sausage, boiled meat, fried minced meat or mushrooms.
From rice. Good old Soviet advice to dilute any minced meat with boiled rice. In general, you can use completely different cereals or legumes for these purposes. Not only rice or buckwheat, but also millet, oatmeal or barley.
It comes out quite interesting with lentils or bulgur. And even beans. Here where the fantasy will lead. And most importantly, that is satisfying!
From cabbage. Marvelous? But delicious! For example, a filling of fried or sautéed fresh cabbage with chicken breast or bacon.
There is another option - to combine minced meat fried with onions with sauerkraut.
This is actually interesting. The pancake is slightly sweet, the minced meat is moderately spicy, and the sauerkraut gives sourness. Here is a mixture of these flavors - a real bomb!
Advice: so that the minced meat in the pancakes is not dry and does not spill out, add milk sauce to the fried minced meat or cereal. What can you cook. Something like bechamel.
The cabbage stuffing too. And even in the filling of pearl barley porridge with mushrooms. Everything gathers, holds well and comes out juicy as a result. This method can be used in any pies, pies, pancakes, lasagne. Where appropriate.
