Wash and dry the cranberries. If there are no fresh berries, use frozen ones. You do not need to defrost it.

Knead the test
The dough for this cake is kneaded quickly.
- I add salt, soda and baking powder to the flour (for myself, I add a little cinnamon).
- I put soft butter and 100 g of sugar in a bowl.
It is desirable to knead the dough either with a planetary mixer, or with a hand mixer.
All products in the recipe should be at room temperature.
- I mix the butter and sugar and add the eggs one at a time.
- Add a quarter of dry ingredients and mix at low rpm.
- To this I add 230 g of kefir or fermented baked milk.
- I pour in all the dry ingredients and mix until combined.
BAKE BAKING
- I put half of the dough into the mold.
- I spread some of the cranberries on top so that it does not come into contact with the mold.
- I add the rest of the cranberries to the remaining dough, mix quickly and spread on top. The purpose of these manipulations is to add as much cranberries as possible.
But I reduce sugar in all my recipes.
The cupcake is baked for about an hour, check, as always, on a dry skewer. I'm sending the cupcake to the oven.
I mix powdered sugar with milk. A hot cake should be greased with milk and powdered sugar and allowed to cool.
