Porous caramel on soda - have you heard of this recipe? Just three ingredients and the sweet treat is ready. It is also called "volcanic caramel" or "caramel honeycomb", because it really looks like a honeycomb. But only outwardly, of course))
You can eat it as an independent dessert, or you can use it to decorate cakes, or cover it with chocolate - it will be even tastier.
Ingredients:
sugar - 1.5 cups
soda - 2 teaspoons
liquid honey - 3 tablespoons
Note: You can use glucose syrup instead of honey, but I don’t use it, so I don’t buy it. And it is not sold everywhere. I know that this syrup is sold in confectionery stores, in hypermarkets, in online stores (like Ozone or Wildbury - I think there is)
So, take a 3 liter pan (at least 2 liters), put sugar and add 3 tablespoons of water - the sugar should all become wet.
Add 3 tablespoons of liquid honey and set over high heat. Stir constantly, bring to a boil, then reduce the heat.
Now the most important thing is to bring the mixture to a temperature of about 150 degrees or a little less. If you have a kitchen thermometer, great. If not, then we determine the desired temperature as follows: we take a little mixture and put it in cold water. Then we try to roll the ball - if it rolls, then great, remove it from the stove. If not, cook a little more. It takes about 7-10 minutes.
Next, remove the syrup from the stove and add soda (no need to extinguish!) Stir with quick movements, the mass will begin to foam, will increase in volume and become homogeneous - and immediately pour it into a mold covered with foil (it must be prepared in advance). There is no need to lubricate the foil.
Now we leave at room temperature for 2 hours. During this time, the caramel will harden and can be eaten. It is hard to cut with a knife, so you just need to break it with your hands into small pieces. With tea instead of sweets, it just flies away in an instant)))
