Lean and delicious mayonnaise, which I often prepare as a substitute for store-bought mayonnaise. It turns out to be tender, tasty - great for salads and appetizers. Try it!
Preparation:
We need liquid from canned green peas. I say at once in each can there is a different amount of it - it depends on the volume of the can itself and on the manufacturer. On average, this is 130 ml.
Add to this liquid 1 teaspoon of mustard, half a teaspoon of sugar, salt to taste (I put about 0.5 teaspoon)
Beat with a blender, and literally in 5 seconds the mass will begin to turn white. Add 1 teaspoon of vinegar 9% and vegetable oil - it will take about 330-350 ml.
Pour the oil in a thin stream, while continuing to beat. Literally 1-2 minutes and the mass will be thick, smooth - the mayonnaise is ready.
A couple of tips: Lemon juice can be used instead of vinegar. And instead of liquid from peas, liquid from canned white beans - the taste is slightly different, but also awesome! After homemade mayonnaise, I don't want to buy more store-bought mayonnaise.
