Ingredients: canned red beans (200 gr), onions (medium), tomato paste, walnuts, garlic, cilantro, Salt, Vegetable oil
Cooking method:
Peel the onions and cut into thin half rings. Peel the cloves of garlic, crush with a knife and finely chop.
Grind the walnuts in any convenient way to a state of fine crumbs.
Heat vegetable oil in a frying pan, put onions and some garlic for aroma. Fry over medium heat for 8 minutes until soft.
Open the canned beans, drain the water from the jar through a sieve and be sure to rinse it under running water. Let the water drain and put the beans in a skillet with the onion. The beans must be slightly mash with a crush so that some of the grains fall apart and create a mushy base.
Add tomato paste, salt and mix. Pour some water, close the lid and simmer over low heat for 5 - 7 minutes.
At the end of cooking, add nuts, garlic, finely chopped cilantro to the lobio. Stir and taste for salt. Add salt if necessary. Pour in about half a glass of water, stir so that the dish is not too dry. After a minute, remove from the stove.
