Four stunningly beautiful salads that should be on every holiday table! This is a selection of recipes for gorgeous salads that will decorate any festive table, not just New Year's. This is an unusual salad CRYSTAL, light ALTAIR Salad, bright salad-appetizer "New Year's toys" and delicious Salad with shrimps "January 1". They are all completely different in composition and each is delicious in its own way. I am sure that any of these festive salads will take their rightful place on your New Year's table. I highly recommend these salads for cooking!
Crystal salad
Ingredients:
- turkey fillet - 200 g
- champignons - 200 g
- eggs - 3 pcs.
- cheese - 100 g
- boiled carrots - 1 pc.
- onion - 1 pc.
- mayonnaise - 100-150 g
- carrots (for broth) - 1 pc.
- onion (for broth) - 1 pc.
- bay leaf - 1 pc.
- black peppercorns - 2 pcs.
- allspice peas - 2 pcs.
- ground black pepper
- salt to taste
- parsley
Jelly:
- broth - 500 ml
- gelatin - 15 g
Step-by-step cooking recipe:
- Cooking meat and broth. Pour about 1 liter of water into a saucepan and put 200 g of turkey fillet, it can be replaced with chicken fillet. We also put one whole onion and peeled carrots here. Add 1 bay leaf and 2 black and allspice peas. We put everything on fire. As soon as the water boils, reduce the heat to low and remove the foam. Salt to taste and stir. After boiling water, cook the fillet for about 20-25 minutes. After 25 minutes, we take out the vegetables from the pan, and leave the finished meat to cool in the broth.
- We take out the cooled meat from the pan, and filter the broth through a paper towel or cheesecloth. We need 0.5 liters of broth.
- Cooking jelly. Pour 15 g of gelatin with about 150 ml of strained broth. Mix everything and leave the gelatin to swell.
When the gelatin is swollen, dissolve it in the microwave. Pour the dissolved gelatin into the remaining 350 ml of broth. We mix everything.
Pour the mixture into a flat container. The liquid layer should be 7 to 10 mm. Put the jelly in the refrigerator to freeze. - Let's prepare the rest of the ingredients. Cut the onion into quarters into rings. Cut the champignons into slices. Put chopped mushrooms in a hot pan. We cook them over high heat, stirring occasionally, until all the liquid has evaporated. As soon as all the liquid from the mushrooms has evaporated, pour in a little vegetable oil and put the chopped onion. Fry the onion with mushrooms until the onion is golden. At the end, salt and pepper the mushrooms, mix everything and remove from heat.
- Before rubbing boiled eggs for salad, cut flowers out of them. With a sharp small knife we make zigzag cuts around the circle of the egg. We remove the cut off top and turn it over, it turns out a flower. So we cut out three flowers. We also leave about a quarter of the yolk to decorate the centers of the flowers. The remaining three eggs on a coarse grater.
- Cut out three flowers from a plate of boiled carrots using cutting. All the remaining carrots are also three on a fine grater.
- Three cheese on a fine grater. Cut the boiled meat into small cubes.
- We fold the salad. Cover the bowl with cling film. Put grated cheese in the first layer. We leave about 20 g of cheese, we will need it a little later. We apply a mesh of mayonnaise.
We spread a layer of grated eggs, level and tamp a little with a spoon. We apply a mesh of mayonnaise.
The next layer is fried mushrooms with onions. We flatten and make a mesh of mayonnaise. We spread a layer of boiled carrots, salt this layer a little and apply mayonnaise.
Put the chopped boiled fillet in the last layer and tamp everything with a spoon. Cover the salad with foil and let it brew for at least 10-15 minutes in the refrigerator. - We unfold the film and turn the salad onto a dish, on which we will serve it on the table. Grease the salad with mayonnaise on the bottom. Then sprinkle with grated cheese, which was previously left in order for the entire salad to be of a uniform color.
- Cut the frozen jelly into rectangles and small squares. Put the jelly cubes on top of the salad. We lay out rectangles along the bottom, and small cubes closer to the top. Put the salad completely in jelly.
- Decorate the top of the salad with egg flowers. Pour grated yolk into the middle of each flower. Insert parsley leaves between the flowers. We also decorate the salad with carrot flowers. We also make the middle of the carrot flowers from the yolk.
The salad is ready, you can serve it on the table. The crystal salad turned out to be beautiful and unusual, it immediately attracts the eye.
Altair salad
Ingredients:
- turkey fillet - 250-300 g
- corn - 1 can
- long cucumber - 1 pc.
- sweet and sour apple - 1 pc.
- mayonnaise - 100 g
- lemon - 1/2 pc.
- parsley - for decoration
Step-by-step cooking recipe:
- Cut a long strip from one long cucumber in a circle and fold it into a flower. We will need it to decorate the salad.
Cut the rest of the cucumber into small cubes. - Cut the boiled turkey fillet into small cubes. You can also use chicken or other boiled meat.
- Cut the sweet and sour apple and cut out the middle and cut off the skin. Cut the prepared apple into cubes. To prevent the apple from darkening, pour over it with lemon juice and stir.
- For convenience, put the mayonnaise in a culinary bag. Lining the bowl in which we will fold the salad with cling film.
Place two-thirds of the corn can in the bottom of the bowl. We leave part of the corn for decoration. As far as possible, tamp the corn with a spoon and make a net of mayonnaise. Spread the mayonnaise evenly with a spoon.
Put the sliced apple on top and tamp it too. Apply a net of mayonnaise and spread the mayonnaise with a spoon. The apple layer can be replaced with canned pineapple.
Put the cucumber on the next layer. Distribute evenly, tamp with a spoon and apply a net of mayonnaise.
And put the meat in the last layer, we also tamp it with a spoon. Leave the salad for 15 minutes, so that it is infused. - Cover the prepared salad with a dish and turn it upside down. Carefully remove the bowl. Decorate the sides of the salad with the remaining corn. Put a cucumber flower on top of the salad. Place parsley leaves around the flower. For beauty, put a pomegranate seed in the center of the flower. The salad is ready, you can serve it on the table.
Altair salad turned out to be very tasty, fresh and beautiful.
"Christmas Toys" appetizer salad
Ingredients:
- boiled chicken fillet - 300 g
- boiled eggs - 4 pcs.
- cheese - 150 g
- boiled potatoes - 2 pcs.
- boiled beets - 1 pc. (250 g)
- boiled carrots - 2 pcs. (250 g)
- pickled cucumber - 1 pc.
- mayonnaise - 5 tbsp. l.
- dill - 1 bunch
- salt - 1/2 tsp l.
Step-by-step cooking recipe:
- First, let's prepare all the ingredients for the salad. Ovated potatoes, cheese, three boiled eggs on a coarse grater. Finely chop the boiled chicken breast with a knife. Cut the pickled cucumber into small cubes.
- Put prepared eggs, potatoes, grated cheese, chicken fillet and chopped cucumbers in a bowl. Salad and season with about 4-5 tbsp. mayonnaise. Mix everything well.
- Now let's prepare the vegetables for decoration. Boiled beets, weighing three, on a fine grater. Three boiled carrots, too, on a fine grater.
Finely chop a fresh bunch of dill. - Roll balls from the salad with a diameter of about 4-5 cm. You should get 19 pieces. Roll 6 balls in chopped dill. Roll the next 6 balls in grated boiled carrots and roll 7 balls in grated boiled beets.
- Put a beet-colored ball in the center of a large dish, put balls with carrots around it. The next row, alternating, put the balls of dill and beets.
The New Year's Toys appetizer salad turned out to be bright and tasty.
Salad "January 1"
INGREDIENTS:
- boiled eggs - 6 pcs.
- frozen shrimp - 400 g (net weight 180 g)
- mayonnaise - 150 g
- Gouda cheese - 120 g
- sweet pepper - 1 pc.
- boiled carrots - 1 pc.
- dill - twig
- pomegranate - 5-6 seeds
- salt to taste
Step-by-step cooking recipe:
- First, let's prepare all the ingredients. Cut two strips out of a large sweet pepper. We put one strip, and cut the second so that it turns out to be one. Cut the remaining pepper into small cubes.
- Divide boiled eggs into yolk and white. Protein separately three on a fine grater. Three yolks on a fine grater too.
- Three cheese on a fine grater. For convenience, put the mayonnaise in a culinary bag.
- We fold the salad. Put the chopped peppers on the dish, forming a rectangle. For the salad, I took a rectangular dish measuring 20 by 30 cm. Salt a little pepper and apply a net of mayonnaise.
We spread the peeled boiled shrimp and apply a net of mayonnaise. Put the grated yolk on the next layer. We leave about a third of the yolk to decorate the salad. Salt the yolk a little and apply a net of mayonnaise. - Put grated cheese on the next layer. Line the whole salad with a fork. Again we apply a mesh of mayonnaise on top and this time also on the sides. Spread the mayonnaise over the surface of the salad with a fork.
- Put the grated protein in the last layer. Cover the salad completely on top and sides. We align the salad on all sides, making it rectangular.
- Grease a small part of the salad with mayonnaise on one side. This will be the top of the tear-off calendar. Sprinkle with the remaining grated yolk.
- Cut the boiled carrots into long slices. Cut a slice of carrots into thin strips. Cut the strips into sticks, small cubes and rectangles. From carrot blanks we put letters on the board. Transfer the prepared letters to the salad. We carefully expose them at the bottom of the calendar.
- In the center of the salad, lay out the already prepared unit of pepper. Decorate the salad with a sprig of dill. We put pomegranate seeds, imitating New Year's toys. The salad is ready, you can serve it on the table.
The salad on January 1 turned out to be very beautiful, original and tasty.
