Probably not a single New Year's festive table can be imagined without appetizers with red fish. As a rule, these are all kinds of sandwiches. Quail eggs on skewers
Ingredients:
- boiled quail eggs - 15 pcs.
- salted red fish - 50 g
- mayonnaise - 2 tbsp. l.
- lettuce leaves - 3-4 pcs.
- ground black pepper - to taste
Step-by-step cooking recipe:
- Gently cut the boiled quail eggs in half. From the halves of the eggs, carefully, trying not to damage the whites, remove the yolks into a separate bowl.
- Cut about 50 g of salted red fish into small cubes. Put the chopped fish to the yolks. Pepper everything with black pepper and season with about 1-2 tbsp. l. mayonnaise. We mix everything.
- Fill the proteins with the prepared filling. We put the filling with a small slice. And we connect the two stuffed parts of the quail egg together. So we stuff all the eggs.
- Cut off the outer wavy part from the lettuce leaf. We put the appetizer. On a skewer, string a piece of lettuce folded in half, and then prick the stuffed quail egg. So we add the whole snack.
- Put the prepared appetizer on skewers beautifully in a circle on a plate. In the middle, for beauty, we put one stuffed quail egg. The appetizer is ready, you can serve it on the table.
Tartlets with red fish
Ingredients:
- sand baskets - 10 pcs.
- cheese - 100 g
- slightly salted salmon - 50-100 g
- salad yogurt - 2-3 tbsp. l.
- boiled egg - 1 pc.
- small cucumber - 1 pc.
- dill - small bunch
- garlic - 2 cloves
Step-by-step cooking recipe:
- First, we prepare the filling for the baskets. Three cheese and boiled egg on a fine grater. Finely chop a small bunch of dill.
Put grated cheese, egg and chopped dill in a bowl, squeeze 2 cloves of garlic through a press. We fill the filling with 2-3 tbsp. not sweet thick yogurt and mix everything well. - Fill the tartlets with the finished filling. This amount of filling is enough for about 10 tartlets.
- We take a piece of red salted fish and cut it into slices. For 10 tartlets, I needed about 50 g of salmon. We roll each piece of salmon into a roll, imitating a rose. Since I had a thick piece of fish, the roses turned out to be high and it would be inconvenient to put them in a basket, so I cut all the roses in half.
- We put red fish roses in the center of each tartlet. Cut a small cucumber into circles, and then cut the circles in half. Insert the prepared cucumber semicircles along the edge of the tartlet around the rose.
- The tartlets are ready, you can serve.
Snack with red fish on a cracker
Ingredients:
- salty cracker
- salted red fish
- cream cheese such as Philadelphia
- lemon
- Dill
Step-by-step cooking recipe:
- Grease each cracker with cream cheese. Cream cheese can be replaced with melted amber cheese.
- Cut the red fish into slices. I also cut each piece lengthwise into two parts to make a strip.
- Fold the fish in half and put it on the cheese with cracker. You can also cut the fish into thicker pieces and place one square of fish on each cracker.
- Cut one lemon lengthwise into 4 parts. Cut a quarter of lemon into thin slices. Put quarters of sliced lemon on the fish. Decorate the appetizer on top with a small sprig of dill.
- The appetizer is ready, you can serve it on the table.
Roll with spinach and red fish
Ingredients:
Sponge cake with spinach:
- eggs - 3 pcs.
- spinach - 150 g
- flour - 50 g
- salt - 1/3 tsp l.
Filling:
- cream cheese - 300 g
- red fish - 200 g
- lemon juice - 1 tbsp l.
Step-by-step cooking recipe:
- First, prepare the spinach biscuit. Squeeze the defrosted spinach well from the liquid with your hands. If you use fresh spinach leaves, then you don't need to squeeze them.
We carefully divide the eggs into yolk and white. Pour 1/3 tsp to the spinach. l. salt and add 3 yolks. Grind everything with an immersion blender until smooth. Pour 50 g of flour into this mixture and mix well. - In a separate bowl, beat 3 proteins with a mixer until firm and firm foam. It is very important that the whites are well beaten, otherwise the biscuit will not work.
- Put the spinach mixture in a bowl and add about a third of the whipped egg whites. Mix everything well. Add the remaining whipped protein to this and mix gently with a spatula or spoon until smooth.
- Put the prepared biscuit dough on a baking sheet covered with parchment paper. We level the spinach mass with a thin layer, forming a rectangle measuring 20 by 30 cm. Smooth siliconized parchment paper should be used. We put everything in the oven preheated to 180 degrees. and bake a biscuit for 10 minutes. It is not necessary to bake for a long time, so as not to overdry the biscuit.
Remove the baked biscuit from the oven and let it cool. - Turn the cooled biscuit onto a board, and carefully remove the parchment paper. If, nevertheless, the paper stuck tightly to the biscuit, then it should be moistened with water, wait about 5-7 minutes and again try to remove the paper from the biscuit. Everything should work out.
- Let's prepare the filling. In cream cheese "Philadelphia" or any other squeeze about 1 tbsp. l lemon juice. We mix everything. If your cream cheese is very thick, then you can add a little cream, milk, sour cream or mayonnaise to it. To mix everything.
- Turn the biscuit over with the smooth side down. Spread the cheese mass evenly over the entire surface on a spinach biscuit.
- Cut salted red fish into thin slices. Put the pieces of fish on the cream cheese. You do not need to put fish on the very edge, so the roll will not keep its shape better. We carefully fold everything into a tight roll. We wrap the roll in plastic wrap and let it infuse in the refrigerator for 2 hours.
- Cut the cooled roll with spinach and red fish into portions and serve.
How to salt red fish
Ingredients:
- red fish - 1 kg
- salt - 2 tbsp. l.
- sugar - 1 tbsp. l.
- black peppercorns - 6 pcs.
Step-by-step cooking recipe:
- I will salt the salmon, but this salting method will work for any red fish.
Wash a piece of fish and dry well with paper towels. Now the fish needs to be cut in half to remove the backbones. Insert the knife in the middle along the ridge of the fish and carefully cut off the bones on one side of the salmon.
Separate the fillet from the bones from the other half of the fish in the same way. I have a 1 kg piece of fish. - Any piece of fish can be salted, regardless of weight.
For salting for each kilogram of fish, you need to take 2 tbsp. l. coarse salt, 1 tbsp. l. sugar and mix everything. - Pour a little salting mixture on the bottom of the container where the fish will be salted.
Then we put the piece of fish skin side down. Sprinkle it well with salting mixture from all sides.
The second piece of salmon on my side did not fit, so I also salted it well on all sides and put it on the first piece of salmon. - Put 5-6 black peppercorns on the sides of the fish.
We cover everything with cling film and set the refrigerator to be salted for a day or two. It all depends on how salty you prefer the fish. - The fish is salted. Now wash off all the remaining salt from the fish under running cold water. Dry immediately with paper towels.
- The fish is ready, you can cut it and serve it on the table.
