Ingredients: Sponge cake (15 cm for 3 cakes):, Rice flour, Baking powder, Egg, Kefir, Sugarzam, Caramel filling:, Dates, Peanuts, Milk, salt, Nut filling:, Cashews, Hazelnuts, Coconut oil, Chocolate icing:, Bitter chocolate, Vegetable oil, Impregnation:, Nut syrup 0 kcal without sugar or 40 ml of water with Sugarzam

Cooking method:

Sponge cake: 1. Mix the flour, baking powder, kefir, 4 yolks and sweetener. 2. Beat the whites until strong peaks and gently add to the mass. 3. Bake in a preheated oven at 180 degrees for about 40-45 minutes. 4. Cool the finished biscuit, cut into two or three parts. 5. Soak the cakes with syrup or water with sugar.

Separate the dates from the seeds and pour boiling water for 30 minutes. Separately pour boiling water over cashews and hazelnuts for 30 minutes. Meanwhile, fry the peanuts in a dry frying pan. We will make caramel from dates. The dates are well swollen and carefully remove the skin. This will make the caramel smoother and more uniform in texture.

We transfer the completely peeled date to the grinder and add milk, and bring it to a uniform state. We transfer the date mixture to a saucepan with a thick bottom and stir constantly, boil for 4-5 minutes over very low heat. During this time, the caramel will darken and thicken a little. Remove the stewpan from the stove. Add the roasted peanuts to the date caramel and add a pinch of salt and mix well.

Dry the hazelnuts in a dry frying pan. Exactly until the skin from it is easy to peel off with your hands. Add the peeled hazelnuts to the chopper, add the cashews to it and pour in the melted butter. Grind the nuts until smooth.

We collect the cake. Put some date caramel on the substrate. Crust + nut filling + date caramel. Repeat the layer. Put the nut filling on the last cake. Cover / flatten the sides of the cake with date caramel.

Melt the chocolate in the microwave in pulses of 10-15 seconds, stir; add oil. Pouring on the cake, decorating. Bon appetit ❤️
