Cooking method:
Beat, salt and pepper the rolls. Dice the apples. Peel and finely chop the onion. Beat the chops with a hammer, top with a few apple slices, onion cubes and 2 dried plums each. Roll up the rolls and pin or tie with kitchen twine.
Fry the rolls on all sides in ghee, placing them seam side down in the pan. Put the fried rolls in the brazier in which you will simmer, add the remaining apples and onions to the rolls.
Pour in the hot broth and simmer until the rolls are tender (about 30 minutes from beef, 40 minutes).
