# new year I propose to prepare chocolate-coffee cupcakes with cream caps. These cakes are perfect for any occasion. They are soft, airy, porous and very tasty.

Ingredients: flour, sugar, butter, large egg, baking powder, cocoa, salt, milk, instant coffee, For cream:, milk chocolate, cream from 33%, vanilla extract (or a packet of vanilla sugar, or vanillin to taste), gelatin + 30 ml of water for soaking

Cooking method:

All ingredients for the dough should be at room temperature. We will prepare the molds in advance. I have paper capsules.

Put the milk on the stove and bring it to a boil. Add 1-1.5 tsp to hot milk. tablespoons of instant coffee, mix and leave to cool to room temperature.

In a separate container, combine and mix thoroughly with a whisk flour, cocoa powder, baking powder, a pinch of salt and sift through a sieve.

Add softened butter and sugar to the mixer bowl. Install the "spatula" and stir until the butter and sugar are evenly distributed.

Then add the egg at room temperature and mix thoroughly. Add vanillin, vanilla sugar, or vanilla extract if desired.

Add dry ingredients and coffee milk alternately and knead the dough. It should come out smooth and lump-free.

We spread the dough in capsules about half the height, because during baking, the dough expands greatly. We send it to an oven preheated to 170 degrees. The cupcakes are baked for about 18 minutes. The baking time depends on the size of the cupcakes and on your oven. I bake top-bottom, no convection, medium setting. We check the readiness with a wooden stick; it should come out dry and clean from the middle of the cupcake.

Transfer the baked cupcakes to the wire rack and let cool completely. Optionally, cupcakes can be soaked in sugar syrup (with rum or cognac).
