Published a Christmas Cupcake recently. These muffins are prepared using the same technology, the only one instead of 100% sour cream took 150 gr. Greek yogurt and 50 gr. sour cream. #kanikuli
Ingredients: Greek yogurt;, Whole grain flour;, Eggs;, Sour cream;, Vegetable oil;, Raisins;, Dried apricots;, Prunes;, Dates;, Raw peanuts;, Baking powder;, Cinnamon
Cooking method:
Prepare all foods. Beat eggs and salt in a bowl. Add vegetable oil - stir with a whisk. Pour boiling water over each dried fruit separately, leave for 10 minutes, then drain and dry. Cut prunes, dates and dried apricots into small cubes.
Add sour cream and yogurt. Stir well. Add baking powder - stir.
Gradually introduce flour - stirring constantly until smooth. Add dried fruits, peanuts, cinnamon - stir.
Preheat the oven to 180C (I have an electric one), spread the dough in cupcake makers (if made of metal, grease with butter), bake for 20-25 minutes (check the willingness with a wooden skewer).
