Shrimp pad thai

Ingredients: Rice noodles, Vegetable oil, Shrimp, Sauce, Red onion, Green onion, Tofu cheese, Bean sprouts, Soy sauce, Water, For sauce:, Chili pepper (dried), Red onion, Garlic, Cane sugar, Tamarind paste, Tomato paste, Fish sauce, Water

Cooking method:

Soak dry chili peppers in water for 10-15 minutes. Remove seeds and cut into pieces.

Send chopped red onion (you can use shallots), garlic, chili, a little water (70 grams) into a blender. Grind to a liquid state.

Dilute tamarind paste in water (125 g per 150 g of water).

Fry tomato paste in vegetable oil, add chopped vegetables. Fry for a couple of minutes.

Pour in sugar. Mix. Pour in tamarind and 300 g of water. Boil.

Add fish sauce. Simmer over low heat for 1 hour, STIRING (you can't just leave the sauce on the stove).

The sauce must be liquid (otherwise the noodles will stick together strongly)! Pad thai is fried for 3-4 minutes.

Soak bean sprouts in cold water (original soy sprouts). Peel the shrimp and remove the intestines (either with a toothpick or by cutting along the tail with a knife).

Soak the noodles in cold water for about 10 minutes. The quantity is up to you. When it wraps freely around the finger, the water must be removed.

Cut the tofu into cubes. Green onion obliquely (as is customary in Thailand), red onion cut into small pieces.

It's better to use a wok. It is easier to stir the noodles in a circular motion so that it does not stick together. Fry all foods on a HIGH fire.

1. Add vegetable oil (a couple of tablespoons). 2. Red onion (before color change). 3. Tofu cheese (until the edges of the cubes are golden brown).

4. Noodles 5. Sauce 3 tbsp and 3 tbsp water (stir until water evaporates).

6. Shrimps (begin to curl up - you need to go to the next. stage). 7. Sauce 5 tbsp. Mix.

8. Move everything to one side and pour the egg into the free area (wait for a while to grab and mix with noodles). 9. Sprouts and green onions.

10. Soy sauce. 11. Fry 10-15 sec.
