Very tasty, tender and airy cake with a minimum amount of dough. It is good both for the first and second courses, and for breakfast with coffee and tea.

Ingredients: flour, milk, butter, salt, peeled potatoes, hard cheese, mayonnaise, olive oil for frying

Cooking method:

Let's prepare food. Based on one loaf.

From flour, milk, butter at room temperature and a couple of pinches of salt, knead the dough. Knead until smooth and uniform, lightly beating on a bowl.

Wrap in cling film and refrigerate for an hour.

At this time, boil the potatoes until tender. After knead it with a fork, add mayonnaise and mix well.

After an hour, we take the dough out of the refrigerator and roll it out on a table dusted with flour into a circle with a diameter of ~ 20 cm.

Sprinkle 1/2 of the grated cheese in the center. Spread mashed potatoes on top and also distribute the remaining cheese on top.

We pinch the edges to the top to the center tightly. Turn the cake over to the other side and carefully roll out to a thickness of ~ 1 cm.

We heat the pan for pancakes well, sprinkle with olive oil and spread the cake on it. Fry on very low heat on one side, then lift the cake onto a spatula, sprinkle the pan with a little more oil and turn it over onto its cake with the other side. We continue to fry on low heat until cooked.

Serve immediately piping hot.
