Ingredients: Base:, cookies (Jubilee), butter, Jelly:, pureed strawberries (I have frozen), water, sugar, gelatin, water for gelatin, Mousse:, curd cheese, cream 33%, powdered sugar, gelatin, water for gelatin
Cooking method:
Preparing jelly: pour gelatin with water and leave to swell. Combine strawberries, sugar and water, bring to a boil. Boil for 3 minutes. Cool slightly and add the swollen gelatin. Stir until smooth, set aside to cool.
Basis: grind cookies with a blender into crumbs, combine with melted butter, mix well. We spread in a form of 22 cm, we tamp well.
Mousse: pour gelatin with water. Mix cottage cheese, cream and powdered sugar with a mixer at the lowest speed until smooth (do not beat). Melt the swollen gelatin and add to the mixture. Mix well.
We divide the mousse into two unequal parts, a large and a smaller one. In a smaller part, add 150 g of strawberry jelly. Pour the white mousse over the cookie base and place in the fridge to set. The next layer is curd mousse, to which jelly was added. Pour over the frozen layer, put in the refrigerator. The last top layer is cooled strawberry jelly.
We put the cheesecake in the refrigerator for several hours. Decorate the top of the cake as you wish.
