Ingredients: For the dough:, rice flour, corn flour, oatmeal (I ground 80 g of gluten-free oatmeal), sugar, applesauce (from thermally processed apples), coconut oil, cinnamon, soda, lemon juice (1 tbsp is enough), For the filling:, cherry (already thawed), sugar (it turns out sour, you can increase the sugar), corn starch

Cooking method:

Melt 90 g of coconut oil. I do this in a small skillet on the stove.

Sift 3 types of flour into a bowl. To make oatmeal, I grinded oatmeal in a coffee grinder (I decided to try using gluten-free hullless oatmeal oatmeal, it took 80 g. You can use the usual one, then maybe it will take less - 60 g).

Add cinnamon and soda to the flour, and mix well, preferably with a whisk.

In another bowl, mix applesauce with sugar, pour in melted coconut oil. Mix with a spoon. I had applesauce ready-made from a can. You can use a store-bought baby or bake apples (or stew) and beat into a puree. I don't think raw apple puree would work. I took the puree out of the fridge.

Knead the dough. Of course, it will not be like wheat flour. It turns out crumbly, it’s impossible to mold something out of it. But a lump is formed from it well. Therefore, now form a lump from the dough, put it in a bag and refrigerate for 25-30 minutes.

Now we prepare the filling: I thawed the cherry and weighed it. It turned out about 330 g. For this amount, I put 30 g of sugar and 25 g of cornstarch. The filling turned out sour in the end, but I even liked it 😊. If desired, increase the amount of sugar (up to 50 g for example). Put the cherries in a blender bowl (I used immersion), mix with sugar, then add starch, mix and beat. But not completely homogeneous, leave a few unground pieces.

Prepare the pie pan. Ideally, a round one, with a diameter of about 22-24 cm, is suitable. But I used a rectangular glass one. You do not need to grease it, the dough is already greasy.

Divide the dough into 2 parts: about 3/4 for the base and about 1/4 for the shortcrust on top.

In the prepared form, form sides from the dough, approximately 5 mm thick (bottom and sides of the form).

Pour the cherry filling over the base.

Crumble the rest of the dough with your hands βœ‹.

Bake in a preheated oven at 170Β°C for 30 minutes. The readiness of the cake will be seen by the color of the crust.
