The dough is prepared quickly, so we boil the rice and eggs in advance, fry the onion in vegetable oil, cut into small cubes, until golden brown - so that all these ingredients have time to cool. Pour kefir into a bowl, add sugar, salt, beat in an egg and pour in 1 tbsp. vegetable oil. Mix everything well until the salt and sugar are completely dissolved. Sift flour into a mixing bowl, add soda and mix very thoroughly. We make a hole in the flour and pour the kefir.
Knead the dough first with a spatula and then with your hands. You don’t need to knead for a long time - as soon as the dough gathers in a lump and there are no dry areas left, add another 1 tbsp. vegetable oil. After that, knead the dough a little more on the table. The consistency of such a dough is very soft, tender and sticky. It is not necessary to hammer it with flour, otherwise the finished pies will turn out tough. We round the dough, put it in a bowl, cover with a towel and leave it on the table for 10-15 minutes.
In the meantime, let's make the filling for the pies. Finely chop the eggs and green onions and combine them in a bowl with fried onions and boiled rice. Mix everything thoroughly, salt and pepper to taste. The filling is ready! Now let's do the dough: divide it into pieces of equal size. I got 16 pieces. Roll the pieces into balls. Cutting the dough and sculpting pies is best on a table greased with vegetable oil.
We knead each ball with our fingers into a cake no more than 5 mm thick. In the middle we put 1 tbsp. with a heap of stuffing. We pinch the pie in the shape of a boat.
Heat the vegetable oil in a frying pan and send the first batch of pies to fry. While one side is frying, we make the rest of the pies. Then turn the pies over and bring the second side to a ruddy state. Place the finished pies on paper towels to remove excess oil. Then transfer to a dish. We prepare all pies in the same way.
These pies with rice, eggs and onions are associated with my childhood. Fluffy, bubbly dough and delicious toppings - perfect with a cup of hot tea!
